Note The dressing can include a mashed anchovy. The recipe is based off the Central Market recipe. Adopted 7/28 Make at your own risk until I work with it. It might be like the wonderful potatoes. 2/3 cup green olives, coarsely chopped
2/3 cup black olives, coarsely chopped
1/4 cup pimiento, chopped
1/4 cup cocktail onion, drain and chop
3 garlic cloves, finely minced
1 tablespoon capers
1/3 cup finely chopped parsley
1 teaspoon oregano
1/4 teaspoon black pepper
1/2 cup olive oil
1 tablespoon red wine vinegar
1 Italian bread or 1 French bread
1/4 lb mortadella, thinly sliced
1/4 lb ham, thinly sliced
1/4 lb hard genoa salami, thinly sliced
1/4 lb mozzarella cheese, sliced
1/4 lb provolone cheese, sliced

Steps:

  • OLIVE SALAD:.
  • If using Italian bread use the one with the sesame seeds on top. If you use French bread it is a Liuzza's-style "Frenchuletta" make sure the bread is crisp crusted.
  • Olive Salad:.
  • Combine all ingredients and mix well.
  • Place in tightly covered container in refrigerator and marinate for at least 12 hours before using.
  • SANDWICH:.
  • Split your loaf lenghtwise then spread with olive salad.
  • Place meats and cheeses evenly on bottom half Close. Cut into quarters.
  • NOTE: Feel free to play with the amounts. Each person as a different taste.

Olive salad -- piled onto ciabatta with layers of Italian meats and cheeses -- distinguishes this sandwich from an ordinary sub.

½ cup coarsely chopped, pitted ripe olives
½ cup chopped pimiento-stuffed green olives
1 tablespoon snipped fresh parsley
2 teaspoons lemon juice
½ teaspoon dried oregano, crushed
1 tablespoon olive oil
1 16 ounce loaf ciabatta or unsliced French bread
1 tablespoon olive oil
1 clove garlic, minced
6 lettuce leaves
3 ounces thinly sliced salami, pepperoni, or summer sausage
3 ounces thinly sliced cooked ham or turkey
6 ounces thinly sliced provolone, Swiss, or mozzarella cheese
1 - 2 medium tomatoes, thinly sliced
? teaspoon coarsely ground black pepper

Steps:

  • In a small bowl stir together ripe olives, green olives, parsley, lemon juice, and oregano. Cover and chill for 4 to 24 hours, stirring occasionally.
  • To assemble sandwich, using a serrated knife split loaf of bread horizontally and hollow out the inside of the top half, leaving a 3/4-inch-thick shell. Stir together olive oil and garlic. Using a pastry brush, brush the bottom half of the bread with olive oil mixture. Top with lettuce, salami, ham, cheese, and tomato slices. Sprinkle tomato slices with pepper. Stir olive mixture. Mound olive mixture on top of the tomato slices. Add top half of bread. To serve, cut into six portions. Makes 6 sandwiches.

  • MAKE 20 evenly spaced small cuts, about 1 ½ inches deep, all over pot roast, using the tip of a sharp paring knife. Insert garlic cloves as deep into the cuts as possible. SEASON the roast on all sides with salt and pepper. HEAT a 6-quart Dutch oven over high heat. Add oil, and when it is hot, sear the roast until it is very well browned on all sides, 4 to 6 minutes per side (don’t be afraid to let the roast get very brown – this is where a lot of the flavor comes from). TRANSFER roast to a slow cooker, then carefully add stock and close lid. Set slow cooker to high and cook for 4 hours (and up to 6 hours depending on your machine). When roast is done, it should be fork tender. PULL meat apart into thin shreds, using two forks, and mix with accumulated drippings in bottom of pot. Allow meat to cool slightly and absorb juices before assembling poboys. (Roast can be cooked and shredded up to 1 week in advance and refrigerated until ready to serve; if prepared in advance, it will need to be rewarmed, covered and in a low oven, before assembling poboys.) PREHEAT broiler. HALVE each bread piece lengthwise and spread top and bottom halves liberally with mayonnaise. Place bottom halves on a baking sheet and spoon shredded meat over them, drizzling it with extra drippings. Top meat with cheese slices. BROIL bottom halves of bread with meat and cheese in oven just until cheese is melted, 2 to 3 minutes. REMOVE from oven. TOP with lettuce and tomato and sprinkle with hot sauce (if desired), add top halves of bread to each sandwich and serve immediately.
