Number Of Ingredients 6

1/3 parts Demerara and Muscovado sugar syrup
1 part Jameson
1 part lightly whipped double cream
3 parts medium roasted espresso coffee
1 vanilla pod or cinnamon for garnish
Fresh grated nutmeg

Steps:

  • Dissolve 2 parts Demerara sugar and 1 part Muscovado sugar in 3 parts of boiling water for the syrup.
  • Stir sugar syrup into Jameson in a warmed glass.
  • Whip chilled double cream lightly until it starts to stiffen.
  • Brew a shot of coffee into the glass from your espresso machine.
  • Reload and brew in a second shot.
  • Pour the whipped cream into the coffee over the back of a spoon so it floats on top.
  • Garnish with a trimmed vanilla pod or a stick of cinnamon and dust with a grating of fresh nutmeg.

1 Wedge of lime

  • Fill highball glass with ice
  • Pour 1 part Jameson Irish Whiskey over ice
  • Top up with ginger ale
  • Stir briefly to mix
  • Take a large wedge of lime, give it a squeeze and drop it into the glass

    1. Peel the celeriac, then slice about 1cm/½ inch off the bottom of it and roll it on to that flat edge, so it's nice and safe to slice. Slice and dice it all up into 1cm/½ inch-ish cubes. Don't get your ruler out – they don't have to be perfect.
    2. Put a casserole-type pot on a high heat, add 3 good lugs of olive oil, then add the celeriac. Pick in the thyme leaves and peel and finely chop the garlic, and add both with a little sea salt and black pepper. Stir around to coat and fry quite fast, giving a little colour, for 5 minutes.
    3. Turn the heat down to a simmer, add the water or stock, place a lid on top and cook for around 25 minutes, until tender.
    4. Season carefully to taste and stir around with a spoon to smash up the celeriac. Some people like to keep it in cubes, some like to mash it, but I think it looks and tastes much better if you smash it, which is somewhere in the middle. You can serve this with just about any meat you can think of.

    1. To make your gravy When you come to make your gravy, your chicken will be covered and resting and you’ll have your tray of chicken juices and vegetable trivet in front of you. Using a spoon, carefully remove 90 per cent of the hot fat from the tray by angling it away from yourself and scooping off the fatty layer that settles on top.
    2. Put the tray back on the hob over a high heat. Add the flour, stir it around and, holding the tray steady with a tea towel in one hand, use a potato masher to mash all the veg to a pulp – don’t worry if it’s lumpy. You can rip the wings off the chicken and break them up into the tray to add more flavour at this point.
    3. When everything is mixed and mashed up, add the alcohol to give a little fragrance before you add your stock (the alcohol will cook away). Keep it over the heat and let it boil for a few minutes. Pour the stock into the tray, or add 1 litre of hot water. Bring everything in the pan to the boil, scraping all the goodness from the bottom of the pan as you go. Reduce the heat and simmer for 10 minutes, or until you’ve achieved the gravy consistency you’re looking for.
    4. To serve your gravy Get yourself a large jug, bowl or pan and put a coarse sieve over it. Pour your gravy through the sieve, using a ladle to really push all the goodness through. Discard any veg or meat left behind. At this point you’ve got a really cracking gravy, and you can either serve it straight away or put it back on the heat to simmer and thicken up.
