Based on a lot of research, this is my take on a classic Neapolitan pizza base, and it’s really reliable at home. The method might seem a bit back to front, but Neapolitans start with the liquid, then add the dry ingredients. Using a pizza stone in a conventional oven gives fantastic results, but a wood oven is the real holy grail.

Yield 6 pizza bases

Number Of Ingredients 3

1 kg Tipo 00 flour plus extra for dusting
1 x 7 g sachet of dried yeast
olive oil

Steps:

  • Pour 700ml of lukewarm water into a large bowl with 10g of sea salt. Gradually mix in a small handful of the flour to break the water and start to turn it into a batter. Mix in the yeast and leave for 2 minutes. Gradually mix in 90% of the remaining flour until you have a pliable, soft dough. Tip the remaining flour on to a clean surface and knead the dough for 20 minutes, or until smooth and elastic (or 10 minutes in a free-standing mixer with a dough hook). Place in a floured bowl, cover with a clean damp tea towel and prove for 1 hour, or until doubled in size. Knock out the air with your fists, roll into a sausage shape, chop into 6 equal pieces and roll each one into a ball, stretching the edges underneath. Place on an oiled tray, drizzle with oil, cover with clingfilm and the tea towel and prove overnight in the fridge (for better flavour and a more relaxed dough). Preheat the oven to full whack (240ºC/475ºF/gas 9) and place a pizza stone inside. Use a fish slice to move one ball of dough on to a flour-dusted surface. Press the ball out into a fat round disc, then pick it up and gently turn and stretch it to 30cm in diameter, using gravity to help you. Stretch it over the back of your fists, then place on a floured pizza paddle or board – the dough should be a little thicker around the edges. Pull it into shape and give it a jiggle so you know it’s free-moving. Working quickly and with restraint, add your chosen toppings. Quickly shunt on to your pizza stone and close the oven door to retain heat. Wait 7 or 8 minutes and it’ll be golden, crisp and ready to eat.

The most authentic, perfect Neapolitan pizza recipe!

Number Of Ingredients 12

Flour - 640g
Water - 360g
Salt - 14g
Yeast - 0.3g
300g tin of plum tomatoes
Tomato puree (optional) - a tablespoon
Salt - sprinkling of table salt or sea salt
Pepper - freshly ground black pepper
Mozzarella - 2 x 125g bags of fresh Mozzarella balls
Parmesan - about 30g
Olive Oil - a few glugs
Basil - hand full of fresh leaves

Steps:

  • Mix all the ingredients into a shaggy mass in a large bowl
  • Cover the bowl with cling film
  • Leave the dough to rest for around 1 hour
  • Turn the dough out onto the counter and knead for around 5 minutes
  • Place the dough back into the bowl and cover
  • Leave the dough to prove for around 20 hours
  • About 4 hours before you intend to cook the pizza, divide the dough into 4 equal parts
  • Place each dough ball into a small bowl and cover
  • Leave the dough balls to prove again for about 4 hours
  • Blend a tin of quality plum tomatoes into a smooth sauce
  • Cook the sauce until it reaches the desired thickness
  • Add a tablespoon or 2 of tomato puree
  • Season with salt and pepper to taste
  • Ensure that you baking stone/tray is inside your oven
  • Get your oven up to temperature
  • Dust a dough ball with plenty of flour and remove from the container
  • In the bowl, press down from the centre of the dough towards the edges
  • Keep turning the dough as you work the air towards the edges
  • Turn the dough over and repeat this process in the bowl
  • Remove from the bowl and place on the counter
  • Stretch the dough outwards
  • Repeat this until you have a base which is about 9 to 10 inches in diameter
  • Top the base with around 2 soup spoons of tomato sauce
  • Spread about a handful of Mozzarella evenly across the pizza
  • Slide the pizza onto a peel
  • Load straight onto baking stone/tray
  • Cook pizza
  • Remove pizza from the oven and place on a chopping board
  • Grate parmesan on top and add some torn basil. Finish with a drizzle of olive oil and a sprinkling of black pepper
  • Let the pizza cool a little and tuck in!

    1. Peel and finely slice the garlic. Pick the basil leaves and tear into pieces.
    2. Place a large non-stick frying pan on the heat and pour in 4 generous lugs of olive oil. Add the garlic, shake the pan around a bit and, once the garlic begins to colour lightly, add the basil and the tomatoes. Using the back of a wooden spoon, mush and squash the tomatoes as much as you can.
    3. Season the sauce with sea salt and freshly ground black pepper. As soon as it comes to the boil, remove the pan from the heat.
    4. Strain the sauce through a coarse sieve into a bowl, using your wooden spoon to push any larger bits of tomato through. Discard the basil and garlic that will be left in the sieve, but make sure you scrape any of the tomatoey goodness off the back of the sieve into the bowl.
    5. Pour the sauce back into the pan, bring to the boil, then turn the heat down and simmer for 5 minutes to concentrate the flavours. It will be ready when it’s the perfect consistency for spreading on your pizza.
    6. Store the sauce in a clean jar in the fridge – it’ll keep for a week or so.

    Classic Margherita (pictured above)

    The Neopolitans don't mess around – they keep their tomato sauce beautifully simple, raw and fresh, so buying quality tinned tomatoes is a must. Simply scrunch tinned San Marzano plum tomatoes in your clean hands until smooth, then spoon over your pizza base. Top with a few fresh basil leaves, some torn mozzarella cheese and finely grated Parmesan cheese. Drizzle with a little olive oil, bake, and finish with a few extra basil leaves. 

    Ricotta and Baby Courgette

    Spoon over tomato sauce (see recipe above), then top with ricotta cheese mashed with fresh marjoram leaves and finely grated Parmesan or pecorino cheese and lemon zest. Add baby courgettes tossed in olive oil and lemon juice, drizzle with a little more olive oil and bake.

    Grape and Honey

    Toss red and black grapes, fresh rosemary leaves and very finely sliced red onion in olive oil, then scatter over your pizza base with pine nuts, finely grated pecorino cheese, torn mozzarella cheese and a tiny drizzle of runny honey. Drizzle with a little olive oil and bake.

    Tomato and Rosemary

    Spoon tomato sauce (see recipe above) over your pizza base, then scatter over some fresh rosemary leaves tossed with a little olive oil. Tear over some spicy n'duja, finely grate over some Parmesan cheese, drizzle with a little more olive oil, and bake.

    Broccoli and Sausage

    Spoon tomato sauce (see recipe above) over your pizza base, then top with small blanched broccoli florets fried with garlic, fresh chilli, black olives (destoned) and sausagemeat. Tear over some provolone cheese, drizzle with a little olive oil, and bake.
