Nashville Hot Chicken Pizza Oven Recipe - Pala Pizza image

Why isn't Nashville hot as popular as buffalo for pizza? It should be. I used a very small amount of pizza sauce for the base, whole milk mozzarella, homemade hot chicken, pickles, and then drizzled with some leftover spicy oil. The perfect combination of heat and tang.

2 oz pizza sauce
7 oz whole fat mozzarella
330 g NY style pizza dough
Nashville Hot Chicken (I used Josh Weissman's recipe. )
Pickles (Chopped, bite sized.)
Spicy oil (Drizzle (leftover from above chicken recipe))

Steps:

  • Flatten and stretch dough into 14" pies.
  • Prepare your pizza by ladling sauce onto stretched dough. Starting from the outside and moving inward, spread a light even layer of cheese. Evenly top with a healthy amount of Hot Chicken.

16 oz raw pizza dough
2 tbsp flour, for dusting
8 popcorn chicken tenders, cooked & roughly chopped
½ cup mozzarella cheese, shredded
2 tbsp honey, for drizzling
¼ cup Nashville Hot sauce (recipe follows)
chilled dill pickle slices, for topping
chilled sweet onion, sliced for topping
corn meal, for dusting
pizza stone & peel
FOR NASHVILLE HOT SAUCE
½ cup + 3 tablespoons butter
¼ cup honey
1 tbsp apple cider vinegar
3 tbsp cayenne pepper
¼ cup brown sugar
1 tbsp smoked paprika
1 tsp dried black garlic powder
1 tsp chili powder
½ tsp salt
½ tsp pepper

Steps:

  • If using a pizza stone, preheat at 425 F for at least one hour or while prepping the pizza.
  • Cook the chicken according to the instructions on the package. Cool while preparing the sauce and then roughly chop.
  • Prepare the Nashville hot sauce by first melting ½ cup of butter over medium heat until frothy and beginning to brown. Whisk in the honey, apple cider vinegar and brown sugar. Then add the cayenne pepper, smoked paprika, and garlic and chili powders. Season with salt and pepper, to taste.
  • Simmer sauce over medium heat for 10 minutes then reduce the heat to low and cook for another 15-20 minutes, until the sauce has thickened. When the sauce has thickened, stir in the remaining butter. Remove from the heat and keep warm.
  • Dust a flat surface with flour and roll out the pizza dough to a quarter inch thick and about 12-14 inches round. If using a pizza stone, transfer the dough to a pizza peel dusted with corn meal.
  • Brush on about a quarter cup of Nashville hot sauce, leaving a crust around the edges. Top with the chopped chicken and mozzarella cheese. Bake 10-15 minutes, until the crust is golden brown.
  • Top the pizza with chilled pickle slices and sweet onion. Drizzle with honey as desired. Slice and enjoy!

  • In a large bowl, season chicken generously with salt and pepper. Cover with plastic wrap and let chill in fridge 3 hours or up to overnight. Line a large rimmed baking sheet with a metal rack. In a shallow bowl, whisk together milk, eggs, and hot sauce. In another shallow bowl, whisk together flour, paprika, and cayenne. Pat chicken dry, then dredge in flour mixture, then milk mixture, then flour mixture again, and place on wire rack. Repeat until all chicken is breaded.  In a large pot, heat oil until a candy thermometer inserted into pot reads 350°. Working in batches, fry chicken until golden, about 6 to 8 minutes. Scoop out 1/2 cup hot oil, and let remaining oil cool in pot before discarding.  Make spicy oil: In a large heatproof bowl, whisk together cayenne pepper, brown sugar, paprika, garlic powder, chili powder, and salt. Pour in reserved hot frying oil and whisk to combine. Brush over chicken before serving.
