Nashville Hot Chicken is "really hot" these days—pardon the pun. What a lot of the country is just now discovering has actually been around since the 1930's. It began years ago in Nashville with Thornton J. Prince III, a tall, handsome man who had a reputation for being a real ladies' man. Legend has it that one of his ladies found out he'd been running around on her and decided to teach him a lesson. Instead of serving up her typical fried chicken, she'd give him something he'd never forget. She added the spiciest seasonings she could get her hands on to that fried chicken ensuring that it was anything but edible. Thornton took a bite and rather than scream in agony, he loved it. So he ditched that particular woman, kept her recipe, and opened the BBQ Chicken Shack, introducing Nashville Hot Chicken to the rest of the country. Today you can enjoy a hot chicken flavor profile at most any food establishment that serves fried chicken. You can even enjoy the spicy flavors in this simple dip recipe. If you are feeling adventurous, go ahead and bump up the amount of hot sauce and cayenne pepper. Just have plenty of liquid on hand the quench the fire. You may also try something sweet, as some people swear that a dessert helps tame the heat. 3 (8-oz.) packages cream cheese
3/4 cup buttermilk
6 tablespoons hot sauce
1 tablespoon honey
1 1/2 teaspoons cayenne pepper
3/4 teaspoon garlic powder
1 tablespoon sliced scallions
Cooked chicken wings

Steps:

  • Microwave 3 softened 8-oz. packages cream cheese on HIGH until melted, 1 to 2 minutes, stirring after 1 minute. Stir in 3/4 cup buttermilk, 6 Tbsp. hot sauce, 1 Tbsp. honey, 1 1/2 tsp. cayenne pepper, and 3/4 tsp. garlic powder. Microwave on HIGH until hot, 2 to 3 minutes. Top with 1 Tbsp. sliced scallions. Serve with cooked chicken wings.

8 oz. shredded pepper jack
2 packages (8 oz. each) cream cheese, at room temperature
½ cup mayonnaise
2 tbsp. garlic powder
1 tbsp. cayenne
1?½ tsp. paprika
¼ cup honey
1 tsp. hot sauce (such as Tabasco)
8 frozen breaded chicken tenders, cooked according to package directions and chopped
½ cup chopped dill pickles
Texas toast, toasted and cut into 1-inch-wide strips
Melted butter, for brushing
Chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 375 degrees. Set aside 1/2 cup of the pepper jack. In a large bowl, using an electric mixer on medium speed, blend the remaining pepper jack, the cream cheese, mayonnaise, garlic powder, cayenne, and paprika, about 2 minutes. Spread into an 8-inch square baking dish and cover with foil. Bake until heated through, about 20 minutes. Uncover and sprinkle with the reserved pepper jack. Bake, uncovered, until the cheeses melt, about 5 minutes more. 
  • In a small bowl, mix the honey and hot sauce. Top the dip with the chicken and pickles and drizzle with the hot honey. Brush the Texas toast with melted butter and sprinkle with parsley. Serve the dip with the Texas toast.

  • Make dip: Preheat oven to 375°. In a large bowl, combine cream cheese, 1¾ cup mozzarella, mayo, sour cream, green onions, hot sauce, cayenne, brown sugar, paprika, and garlic powder. Season with salt. Gently fold in almost all of the cooked chicken, reserving about 1/4 cup for topping. Fold until just combined. Transfer dip to a medium baking dish or skillet and top with remaining cheese. Add the rest of the chicken to the center of the dip and bake until bubbly and slightly golden, 25 to 30 minutes. Meanwhile, make toasts: Brush each slice of bread on one side with melted butter and season with salt. Cut each slice of bread into quarters diagonally and place on a medium baking sheet. Bake until slightly golden, 8 to 10 minutes. Let cool. When dip is ready, garnish with green onions and pickles and serve with prepared toasts.
