Number Of Ingredients 13

1 cup butter, softened
1-1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 cups quick-cooking oats
1 cup raisins
1 cup coarsely chopped fresh or frozen cranberries
1 tablespoon grated orange zest
1 package (10 to 12 ounces) white baking chips

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, salt and baking soda; add to the creamed mixture. Stir in the oats, raisins, cranberries and orange zest. Stir in baking chips. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° until the edges are lightly browned, 10-12 minutes. Cool on wire racks.

Number Of Ingredients 11

1 package (8 ounces) cream cheese, softened
1 cup butter, softened
1-1/2 cups sugar
1-1/2 teaspoons vanilla extract
4 large eggs, room temperature
2-1/4 cups all-purpose flour, divided
1-1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups fresh or frozen cranberries, patted dry
1/2 cup chopped pecans or walnuts
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, beat cream cheese, butter, sugar and vanilla until light and fluffy, 5-7 minutes. Add eggs, one at a time, mixing well after each addition., Combine 2 cups flour, baking powder and salt; gradually add to butter mixture. Mix remaining 1/4 cup flour with cranberries and nuts; fold into batter. Batter will be very thick. Spoon into a greased 10-in. fluted tube pan. , Bake until a toothpick inserted in center comes out clean, 65-70 minutes. Let stand 5 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar.
