This simple little sandwich is a perfect hot lunch, and it takes minutes to prepare in a toaster oven.

1 whole wheat sandwich roll
2 teaspoons butter
1 clove garlic, halved
1 slice Swiss cheese, or more to taste
1 portobello mushroom cap

Steps:

  • Slice sandwich roll in half and place in the toaster oven for 5 to 6 minutes. Spread 1 teaspoon butter over each half. Scrape garlic over the bread to give it a garlic flavor.
  • Place Swiss cheese over mushroom cap and toast until cheese is melting, about 5 minutes. Sandwich between buttered bread halves.

Yield 21 sandwiches

Number Of Ingredients 11

1 1/2 cups finely minced fresh mushrooms
1 tablespoon thinly minced shallots or 1 tablespoon whites scallion
4 tablespoons butter, divided
3 tablespoons all-purpose flour
1/2 cup chicken stock
1/2 cup heavy cream
1 dash cayenne
1 dash ground nutmeg
1 dash salt
1 dash white pepper
21 slices firm white bread, sliced thin

Steps:

  • Mince mushrooms and shallots. Saute in 2 tablespoons butter. Allow liquid from mushrooms to cook down.
  • Melt remaining 2 tablespoons butter in separate pan; stir in flour to make roux (paste). Add chicken stock, cream, cayenne, nutmeg, salt and white pepper. Cook until mixture becomes quite thick. (Don't let heat get too high.)When mixture is thick add mushroom mixture.
  • Trim crusts from bread. Spread some mushroom mixture on one slice of bread, add second slice, more mushroom mixture, then add third and final slice of bread. Don't spread mushroom mixture to edges, or it will ooze out. There should be enough mushroom mixture to make 7 triple-decker sandwiches.).
  • Preheat oven or toaster-oven to 400°F Toast sandwiches 10 to 12 minutes, or until they are slightly golden in color. Cut each sandwich into three fingers and serve warm.

  • Adjust the cooking rack to the bottom position and preheat your toaster oven to 425°F. While the toaster oven preheats, place the sandwich rolls inside to warm and toast.  Rub a rimmed sheet pan with 1 teaspoon of the oil. In a large bowl, whisk together the remaining 1 teaspoon olive oil, balsamic vinegar, soy sauce, oregano, garlic powder, and pepper. Add mushrooms and stir to coat well with the sauce. Stir in bell pepper and onion. Pour vegetables onto the prepared pan. Once the oven has preheated, remove sandwich rolls and add vegetables. Roast vegetables, stirring occasionally, until fork tender, about 15 to 18 minutes minutes. Carefully remove the pan and divide the veggies into two piles on the pan. Top each pile with a slice of provolone cheese. Return pan to the toaster oven and cook until the cheese is melted about 2 to 3 minutes. Split the rolls in half, scoop the filling into each one, and dig in!
