MUSHROOM DUXELLES - FORAGER CHEF



Mushroom Duxelles - Forager Chef image

A duxelles of mushrooms is one of the oldest, time-tested ways to preserve your harvest. This is a small batch, scale as needed for large harvests. I mostly make this in quantities of 2+lbs, but making a small batch will help you get the feel for the process.

Number Of Ingredients 7

1 lb fresh wild mushrooms cleaned (caps and stems roughly chopped.)
1 Tbsp shallot diced ¼ inch or chopped roughly
½ tsp kosher salt
¼ Teaspoon fresh ground black pepper
2 tbsp oil (plus a little extra for roasting afterword )
¼ cup dry sherry (dry white wine can be substituted)
1/2 teaspoon fresh chopped thyme

Steps:

  • Finely chop the mushrooms by hand, or pulse the mushrooms in a food processor until they're finely chopped, but be careful not to over-process them. Traditionally you would chop them by hand, and it will give the best texture.
  • Heat a large saute pan with the oil. Heat the pan until hot and nearly smoking, then add the mushrooms and shallots, and stir to coat with the oil. Cook for a minute or two, stirring occasionally.
  • Add the salt, pepper and the herbs. Continue to cook, lowering the heat to medium to prevent scorching. Cook the mixture for ten minutes, until the mushrooms have given up their water and the pan starts to look dry.
  • Deglaze the pan with the sherry or wine, then cook off the liquid again until the pan is dry, stirring the pan to coat the mushrooms with the juices. From here, if you like the flavor, you can cool the duxelles and refrigerate them for a few days, or freeze right away for later. If the duxelles taste mild to you, as may happen if you're making a large batch, proceed to drying them out in the oven.
  • Drying/roasting the duxelles to finish (optional)

Yield Makes about 1 3/4 cups; 10 to 12 servings as part of an appetizer menu

Number Of Ingredients 8

1 pound mixed fresh exotic mushrooms, such as black trumpet, chanterelle, cremini, and shiitake, and/or common mushrooms
3 tablespoons butter
½ cup minced onion
1 teaspoon kosher salt
Fresh-ground pepper
¼ cup sour cream
2 tablespoons tarragon-flavored white wine vinegar
1 tablespoon chopped fresh tarragon

Steps:

  • Rinse mushrooms and pat dry with paper towels. Trim and discard any discolored areas and tough stem ends (whole stems for shiitakes). Working in batches, pulse mushrooms in a food processor until finely chopped (or chop with a sharp knife).
  • In a 10- to 12-inch nonstick frying pan over medium heat, melt butter. Add onion and stir often until limp, about 5 minutes. Add chopped mushrooms and sprinkle evenly with salt. Stir often until juices have evaporated and mushrooms are beginning to brown, about 10 minutes; remove from heat. Grind in pepper to taste.
  • In a glass measure, stir together sour cream, vinegar, and tarragon. Pour into mushroom mixture and stir to mix. Serve warm or at room temperature.

Chop the onions very fine or put them into a food processor and process them to a rough mush. In the same processor bowl, add the fine grater attachment and feed all the mushrooms through, including the stalks, or chop finely by hand. 2. Heat a medium sized frying pan on a moderate heat and add the oil, then cook the onions until almost soft. 3. Season the mushrooms well with salt and pepper. Add them to the pan and cook for six to eight minutes. If the mushrooms exude a lot of juice, turn up the heat so the final result is moist but not wet. 4. Remove from the heat and add the lemon juice. Allow to cool and add the sour cream and chives to taste. 5. Serve topped with extra sour cream and chives and toast on the side.
