Homemade meatloaf just like mom used to make has nothing on this bacon-wrapped meatloaf. With a brown sugar-ketchup glaze and whole strips of bacon, this mighty meatloaf is a flavorful meal that’s far from the dry brick that haunts many childhood memories. So the next time you want a throwback dinner but with a delicious updated twist, try this bacon-wrapped meatloaf.

Number Of Ingredients 13

2 lbs lean ground beef
1 cup onion, diced
1/2 cup green bell pepper, diced
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
2 large eggs
1/2 cup rolled oats
1 teaspoon kosher salt
1 teaspoon black pepper
10-12 strips bacon
1/3 cup ketchup
2 tablespoons brown sugar
1 teaspoon paprika

Steps:

  • Preheat oven to 350° F. Line a 9 x 5-inch loaf pan with slightly overlapping pieces of bacon.
  • In a medium-sized bowl, mash together beef, onions, bell pepper, garlic, Worcestershire sauce, eggs, oats, salt and pepper.
  • Spread 2 tablespoons of glaze over the bacon in the loaf pan.
  • Then press the meatloaf mixture into the pan.
  • Fold any overhanging bacon over the top of the loaf pan. Flip the loaf pan onto a baking sheet lined with foil or parchment paper. Carefully wrap the ends of the meatloaf with bacon as well, tucking the strips into the other pieces of bacon so it’s tight.
  • Bake meatloaf at 350° F for 50 minutes. Remove meatloaf, brush with ketchup glaze and return to oven for another 15-20 minutes. Finished meatloaf should have crispy bacon edges and reach an internal temperature of 165° F in the center of the meatloaf.
  • Let meatloaf rest for 10 minutes before slicing and serving.

1 can (8 ounces) tomato sauce, divided
1/2 cup dry bread crumbs
1 large egg, beaten
1 teaspoon dried minced onion
3/4 teaspoon salt
1/2 teaspoon dried oregano
1-1/2 pounds lean ground beef (90% lean)
1-1/2 cups shredded mozzarella cheese
1 jar (6 ounces) sliced mushrooms, drained
Optional: Marinara sauce and minced fresh oregano

Steps:

  • Preheat oven to 375°. In large bowl, combine 3/4 cup tomato sauce, crumbs, egg, onion, salt and oregano; add beef. Mix lightly but thoroughly. Cut two pieces of waxed paper 15-in. long. Place meat mixture in center of one rectangle; cover with second rectangle. , With a rolling pin, press meat into a 13x9-in. rectangle. Remove top sheet of waxed paper. Top with cheese, mushrooms and remaining tomato sauce. Roll up meat, jelly-roll style, starting at narrow end; use waxed paper to help. Place meat seam side down; seal ends securely. Place in a greased 9x5-in. loaf pan. , Bake for 30 minutes. Drain; bake until a thermometer reads 160°, 25-30 minutes longer. If desired, serve with marinara and oregano.

    Freeze option: Bake meat loaves without topping. Cool meat loaves, and freeze, covered, on a waxed paper-lined baking sheet until firm. Transfer meat loaves to an airtight container; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Prepare topping as directed; spread over tops. Bake in a preheated 350° oven until heated through.
