How to Make Cupcakes without Baking Powder - Easy image

Who doesn't love cupcakes? The frosting and their light and spongy texture make these little muffins irresistible. This spongy texture is achieved using baking powder, a chemical leavening that is used to increase the volume of cakes and baked food. The baking powder releases carbon dioxide into the dough through an acid-based solution that creates bubbles in the mixture that leaven it. Without the baking powder, the dough stays dense and the final cupcake result is very solid and almost impossible to eat.If you feel like baking some cupcakes but happen to run out of baking powder don't worry. There are alternatives to using baking powder that will have a result as good as the ones you would have if you used it. At OneHowTo we explain you how to make cupcakes without baking powder.

Number Of Ingredients 8

1/2 cup (4 oz) unsalted butter
1 cup (8 oz) sugar
1 and half cup (12 oz) flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1 and half teaspoon vanilla
2 eggs
3/4 cup (6 oz) liquid whey or buttermilk

Steps:

  • If the butter is too hard, soften it in the microwave for some seconds. Once the butter is soft, add the sugar and the eggs and blend well. After this, add the vanilla.
  • Preheat the oven to 375ºF (190ºC)In another bowl, mix the whey or buttermilk with the baking soda and leave it aside.
  • Take the first mixture and add half of the flour and the salt. Blend it well and then add part of the buttermilk/whey mixture with the baking soda that you've prepared before. Continue blending and then alternate the addition of the two mixtures (flour and whey/buttermilk). End the final addition with the flour.
  • When the batter is all blended, pour it into muffin cups or into a muffin container and bake it for about 15 to 20 minutes.
  • To check whether the cupcakes are cooked, insert a toothpick in them. If the toothpick comes out clean, it means the cupcakes are fully cooked. If not, leave it for a couple more minutes.
  • When the cupcakes are cooked, add the frosting (here's the recipes for Chocolate, Strawberry and Vanilla frosting) and all the decorations you desire.

This muffin recipe I have adapted from many recipes put together until I got the perfect banana muffin! Love these they are great, super moist and yummy!

Number Of Ingredients 10

2 1/4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
4 overripe bananas
1 1/2 cups sugar
3/4 cup soft unsalted butter
2 eggs
1 teaspoon vanilla
1/2 cup pecans, chopped (optional)

Steps:

  • Preheat oven to 375 degrees and lightly butter 24 muffin tins.
  • In a large bowl, combine the flour, baking powder,cinnamon and salt; set aside.
  • With an electric mixer, whip the bananas and sugar together for a good 3 minutes. Add the soft butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice.
  • Mix in the dry ingredients just until incorporated.
  • Fold in the nuts if desired with a rubber spatula.
  • Spoon the batter into the muffin tins to fill them about halfway.
  • Bake until a toothpick stuck in the muffins comes out clean, about 20 minutes. Let cool for a few minutes before turning the muffins out.
