2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups packed dark brown sugar
1 1/4 cups granulated sugar
1 cup butter, softened
3 large eggs
1 cup creamy peanut butter
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 300 degrees F.
  • Mix dry ingredients and set aside.
  • On medium speed, in large bowl, blend sugars; add butter, mix till grainy consistency. Add eggs, peanut butter and vanilla extract; beat till fluffy. On low speed, add flour mixture until barely mixed into butter mixture.
  • Drop by rounded tablespoonsful, 2 inches apart on ungreased cookie sheet. Use a wet or flour coated fork to gently press a crisscross pattern on top of each cookie.
  • Bake until the edges of the cookies are lightly browned, approximately 18 to 20 minutes. Remove to cool on a flat surface.

Given to me my a friend, who knows a friend, etc........way back in 1987. The grinding of the oatmeal is critical. Bake these cookies on the second level from the bottom of the oven.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tablespoon vanilla extract
2?½ cups rolled oats
2 cups all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 ounces semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets or line with parchment paper.
  • Cream butter, sugars, eggs and vanilla until very smooth and fluffy.
  • In a separate bowl, mix together flour, salt, baking powder, and baking soda. In a food processor, blend oatmeal until fine. Add to flour mixture.
  • Stir butter mixture into flour/oatmeal mixture. Blend well.
  • Add chocolate chips and walnuts. Stir until blended. Roll into golf balls size and bake for 8-10 minutes. You do not want to over bake these.

Inspired by a bogus chain-letter cookie recipe, this is my version of the delicious Mrs. Fields cookies that are crispy around the edge and chewy in the middle. Be careful not to cook these too long. I know it becomes tempting to keep cooking these—they don't seem to be done after 10 minutes—but they will continue to cook for awhile after you take them out of the oven, and when cool, will be chewy in the middle.
