2 tablespoons peanut oil
1 cup julienned carrots
1 cup julienned watermelon rind (see Note)
1 onion, cut in half, then cut into 1/2 moon slices
1 yellow bell pepper, cut in half then cut into 1/2 moon slices
3/4 pound medium shrimp, peeled and deveined, with tails removed
1/4 cup Thai chili sauce

Steps:

  • In a large skillet over medium-high heat, heat oil until hot. Add carrots, watermelon rind, onion, and yellow pepper; saute 6 to 8 minutes, or until crisp-tender.
  • Add shrimp to skillet and saute just until shrimp turn pink. Stir in Thai chili sauce, cook until warmed through, and serve.
