It's morel mushroom hunting season! The best way to prepare morels after cleaning them is coating the mushrooms in flour and then frying them in vegetable shortening. That's it! Yum!

Number Of Ingredients 4

1 lb. fresh morel mushrooms
1 c. all-purpose flour
1 c. vegetable shortening
salt, to taste

Steps:

  • Gently brush off any dirt from mushrooms; cut off ends; cut mushrooms in halves lengthwise. Place mushrooms in a large bowl; cover with cold, lightly salted water; refrigerate mushrooms for about 5 minutes to loosen any dirt; pour off salted water; rinse; repeat two more times. The crevices of the mushrooms may hold tiny stones, dirt or insects, so thoroughly rinse mushrooms a final time; allow to drain on paper towels. Place flour in a shallow bowl. Heat vegetable shortening in a large skillet until very hot. Roll mushrooms in flour; tap off excess; gently lay mushrooms in the hot shortening. Fry until golden brown and flour coating is crisp, 5 - 8 minutes, turning often. Drain morels on paper towels. Salt to taste. Serve hot. 4 servings.

Number Of Ingredients 15

2-3 oz. fresh morel mushrooms
Pillsbury Thin Pizza Crust
1 leek
Olive oil
Splash of whiskey, white wine, or madeira
1 tbsp. butter
Choice of prepared pizza sauce: pesto, white, or red
8 oz. fresh mozzarella cheese, sliced
Grated parmesan cheese, to taste
Arugula, optional
Kosher salt
Fresh cracked pepper

Steps:

  • Preheat oven with pizza stone on the middle rack to 425°F. If you don’t have a pizza stone, follow the directions on the packaging to prep the dough for a cookie sheet.
  • Slice parts of the leek that are white, light green, and yellow and wash thoroughly. In a pan over medium heat, add olive oil to coat and cook sliced leek with a pinch of salt. Add a splash of water, cover, and steam until tender, about 5-10 minutes.
  • Uncover and allow water to evaporate. Push leek to the side and add more oil if needed. Brown mushrooms over medium-high heat until golden on both sides—do not crowd the pan. Add a splash of alcohol and cook until evaporated. Take off heat and stir in butter. Season to taste and set aside.
  • On a lightly floured pizza peel, roll out pizza dough and cut and shape it to fit pizza stone, if needed. Spread on pizza sauce and top with mozzarella cheese. If using traditional basil pesto, note that a little bit goes a long way. Top with morel mushroom and leek mixture. Transfer uncooked pizza to a preheated pizza stone and bake in a 425° oven until the bottom and edges become golden and the cheese is fully melted and slightly toasty, about 12-18 minutes.
  • Top with parmesan cheese, freshly cracked pepper, and arugula to taste. Slice and serve.
