Slow Cooker Cuban Mojo Pork Tacos — Let's Dish Recipes image

Pork roast is slow-cooked in a blend of herbs and spices, then shredded and tossed in a spicy tangy sauce and served in warm tortillas.

Warm tortillas
Mango Pineapple Salsa
1/3 cup honey
1/2 cup orange juice
3 tablespoons lime juice
1/4 cup chopped fresh cilantro
1/4 teaspoon red pepper flakes
2 tablespoons olive oil
1 (2-3 lb.) pork roast
6-8 cloves garlic, minced
1/4 cup lime juice
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper
1 cup chicken broth

Steps:

  • Heat oil in a large skillet over medium high heat. Brown pork roast on all sides and transfer to a lightly greased slow cooker.
  • In a medium bowl, whisk together garlic, lime juice, oregano, salt, pepper and chicken broth. Pour over roast.
  • Cover and cook on low for 5-6 hours, or until the pork is tender and shreds easily with two forks.
  • Meanwhile, combine the ingredients for the mojo sauce in a blender. Blend until smooth.
  • Transfer the pork to a large bowl and shred into bite sized pieces. Pour the mojo sauce over the pork and toss to coat evenly.
  • Serve the pork in warm tortillas with mango pineapple salsa, or your favorite taco toppings.

Mission Street Tacos Corn Tortillas
2 Tbsp Extra-virgin olive oil
2 Cloves garlic, chopped
quarter cup Fresh squeezed lime and/or orange juice
half tsp Kosher salt
2 Tbsp Chopped fresh cilantro
1 Tbsp Coconut oil
1 lb Mahi Mahi (or salmon) filets
Salt and pepper, to taste
Mixed greens for serving

Steps:

  • To make mojo sauce: Heat up 2 tbsp. olive oil in a small saucepan over medium heat. Add garlic and cook until softened. Stir in the lime/orange juice, cilantro, and salt. Set aside.
  • Prepare grill to medium high heat. Brush fillets thoroughly with coconut oil and season generously with salt and pepper.
  • Lay fish on the grill, rounded-side down, and leave until you can lift the fish without sticking and there are distinct grill marks, about 5 minutes. (Test it by gently lifting a corner—if it sticks, cook it a bit longer and try again). Carefully turn the fish over and cook until firm to the touch, about another 5 minutes. Cut into smaller chunks when cooled.
  • Warm tortillas for 10-15 seconds on each side in an ungreased pan.
  • Place a bed of greens on each tortilla, top with grilled fish and a generous serving of the mojo sauce. Garnish with cilantro sprigs.
