This herbed mojo steak and crispy potatoes recipe gives the classic meal a fresh spring upgrade, and it's so easy to make.

1/4 c.

olive oil, divided

1-in.-thick strip steaks (about 1½ lbs total)

small red onions, cut into ½-in.-thick wedges

4

small yellow potatoes (about 1¼ lbs), cut into ¾-in.-thick wedges

Steps:

  • In a blender, puree garlic, chile, parsley, cilantro, basil, lime juice, orange juice, cumin, 2 Tbsp olive oil, and ¼ tsp salt until smooth.  Transfer ¼ cup of mixture to a shallow dish and add beef, turning to coat (reserve remaining sauce for serving). Let sit 15 minutes.  Meanwhile, heat oven to 425°F. Grease a large rimmed baking sheet with 1 Tbsp oil. Arrange onions and potatoes on sheet, season with ½ tsp each salt and pepper, and roast until golden brown and tender, 20 to 25 minutes.  Heat remaining Tbsp oil in a large skillet on medium. Season beef with ¼ tsp each salt and pepper and cook until browned and to desired doneness, 8 to 9 minutes per side for medium-rare. Serve with vegetables, reserved sauce, and orange wedges for squeezing.

Cube steak is marinated in a garlicky citrus-lime sauce for a short time, then quickly braised. Serve with boiled potato and choice of vegetable, if desired.

8 garlic cloves
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon ground cumin
fresh ground black pepper
3/4 cup fresh lime juice (from 4 limes)
1/2 cup orange juice
1 1/2 lbs round steaks or 4 cube steaks
1 tablespoon olive oil
1/2 sweet white onion, sliced thin
1/2 red pepper, sliced into thin strips

Steps:

  • Smash and peel garlic and place in a mortar; sprinkle with salt and let sit for 5 minutes to soften the garlic.
  • Use the pestle to form the garlic and salt to a paste; in a small bowl, combine the garlic paste, oregano, cumin, pepper, lime juice and orange juice.
  • Place the steaks in a single layer in a baking dish; pour the marinade over and let sit about 20 minutes.
  • Heat a skillet over high heat, add oil, and cook the onions and peppers, while stirring, until softened, anout 2 minutes; remove to a bowl.
  • Place steaks into the skillet and cook for 2 minutes, then flip and cook another 2 minutes.
  • You will probably have to do this in two batches.
  • Return the onions and peppers, along with the steaks, to the skillet, cover, and cook another minute.
  • Place steaks on a serving plate covered with the onions and peppers.
  • If desired, you can cook the marinade for a couple of minutes and spoon that over the steaks.

There are many variations of mojo. It is the signature marinade of Cuba and it finds its way into many varied dishes. After searching through many recipes and cookbooks; I found this in on www.icuban.com and in "Three Guys from Miami Cook Cuban" by: three brothers-in-law, Glenn Lindgren, Raul Musibay and Jorge Castillo. Many mojos do not include oil; with or without oil the key element is "sour" orange, an almost bitter orange that grows throughout Cuba and now it flourishes in most Miami backyards. In a pinch use: 2 parts orange juice to 1 part lemon juice and 1 part lime juice. The key to a good mojo is in the proportions; garlic, salt, whole black peppercorns and sour orange juice are it's main ingredients.Update: 04/14/08 add a teaspoon of cumin (if you so desire) there are many recipes that call for it but we don't use it here! I have been using this mojo since I left my mother's house, as we always used it in Cuba and Haiti.:)
