Our recipe testers called this big-batch cocktail refreshing and just sweet enough to leave you wanting one more glass. Sound like your kind of cocktail? Yeah, us too.Here, we call for quite a bit of lime juice, which can turn into a chore if you find yourself with a bunch of lackluster citrus. To ensure you get the most juice from each lime, be sure to select fruit that is tender. The harder limes are oftentimes dry on the inside. You'll want to let the base recipe chill completely before serving, and don't make it too far ahead or else the lime will start to lose its punch. Spice up taco Tuesday with our Pitcher Mojitos, or mix up a batch after a day on the lake. However and whenever you decide to serve them, Pitcher Mojitos are sure to be just the cool sipper your summer needs.

Number Of Ingredients 9

3/4 cup granulated sugar
3/4 cup water
2/3 cup packed fresh mint leaves (1 oz.)
2 cups (16 oz.) white rum (such as Bacardí Superior)
1 cup fresh lime juice (from 8 limes)
2 cups club soda
1 lime, thinly sliced into rounds
Lime peel strips
Mint sprigs

Steps:

  • Stir together sugar, water, and mint leaves in a small saucepan; bring to a simmer over medium-high, stirring to dissolve sugar. Simmer, undisturbed, until mint wilts and syrup tastes minty, about 3 minutes. Remove and discard mint. Chill syrup until cold, about 30 minutes.
  • Stir together mint syrup, rum, and lime juice in a large pitcher. Chill at least 1 hour or up to 3 days.
  • When ready to serve, gently stir club soda into mixture in pitcher, and add lime rounds. Pour evenly into 6 ice-filled glasses. Garnish glasses with lime peel strips and mint sprigs.

6 limes, plus 1 lime sliced, to serve
4 tbsp granulated sugar
4-5 mint sprigs
ice
350ml white rum
600ml sparking water

Steps:

  • Chop each lime into six pieces and drop them into a two-litre jug. Add the sugar and squish the lime wedges with a muddler, or the end of a rolling pin. Keep crushing to get out all the juices.
  • Pick the leaves off a mint spring and lay them on one of your hands. Clap the other hand on top to bruise the leaves ever so gently, then drop them into the jug. Repeat with the rest of the mint spring.
  • Fill up the jug about three-quarters full with ice, then add the rum. Stir with a long-handled spoon to mix all the ingredients together gently and top up with the sparkling water. Stir once more, then serve poured into tall glasses with a few extra ice cubes and lime slices. Try these 3 twists Strawberry mojito Muddle 9-10 strawberries, 2 chopped limes and 2 tbsp granulated sugar in a large jug. Bruise the leaves from 2 mint sprigs and add to the jug with a pinch of black pepper. Add lots of ice and stir in 350ml white rum and 600ml sparkling water. Blueberry mojito Put 100g blueberries, 3 chopped lemons and 2 tbsp granulated sugar in a jug and muddle. Bruise the leaves from 2 mint sprigs and add them to the jug with lots of ice. Pour over 350ml white rum and 600ml sparkling water and stir together. Mango & pineapple mojito Tip 50g pineapple pieces, 50g chopped mango, 3 chopped limes and 2 tbsp light brown sugar into a large jug and muddle together. Bruise and add the leaves from 2 mint sprigs, then top with ice. Stir in 150ml white rum, 200ml pineapple rum and 600ml sparkling water.

This is a refreshing Cuban drink. It's hard to stop drinking these on a hot summers day. I made these for the fourth of July and we went on to 3 yes 3 pitchers! If you don't have a muddle stick try a mortar and pestle or the end of a wooden rolling pin. Please use fresh lime if you cannot go ahead and try the already bottled lime juice but if you do think about that when you rate this recipe! I did both and there's nothing like fresh! Same goes for the fresh mint if you need to you can use frozen but I DON'T recommend extract. And for the sugar real granular is what helps muddles the lime and extract the mint oils from the leaves.
