0.75 cup boiling water
1 teaspoon baking soda
1 cup chopped, pitted Date
0.5 cup butter
0.5 cup light brown sugar
1 egg (beaten)
2.25 cups all-purpose flour
4 tablespoons Sugar crystal

Steps:

  • Heat the oven to 170°C (150° fan) 300°F gas 3. Grease a loaf tin.
  • Mix the boiling water with the bicarbonate of soda and pour over the dates.
  • Beat the butter and sugar in a mixing bowl until light and fluffy. Gradually beat in the egg until well mixed.
  • Stir in the flour and sugar crystals. Add the dates and the liquid and stir together well.
  • Spoon into the loaf tin and bake for about 1 hour. Insert a skewer into the centre of the cake, it will come out clean when the loaf is cooked. Cool in the tin, then turn out onto a wire rack to cool completely.

1 cup chopped dates
1 teaspoon baking soda
1 cup boiling water
50 g butter, cubed
1 egg, beaten
3/4 cup brown sugar
1 1/2 cups self raising flour

Steps:

  • Set oven at 180 degrees C or 350 degrees F.
  • Combine dates and sodium bicarbonate in a mixing bowl.
  • Pour in boiling water and mix. Let stand for 5 minutes.
  • Add butter and mix until it melts.
  • Add egg, sugar and flour and mix well.
  • Place in a well greased loaf pan and bake for 45 minutes or until cooked.
  • Turn out onto a cooling rack.
