This gluten-free butter mochi donuts are pretty easy to bake and can be made with both chocolate glaze or any glaze option

2 cups sweet rice flour(Mochiko)
1 cup dark brown sugar packed
¼ cup unsweetened cocoa powder ( I used 70% cocoa)
2 teaspoons baking powder
½ teaspoon Kosher salt
7 ounces heavy whipping cream
6 ounces milk
2 large eggs room temperature
¼ cup  unsalted butter 
1 teaspoon vanilla
2 ounces bittersweet chocolate chopped
2 ounces bittersweet chocolate chopped, melted and cooled
2 to 2 and ½ Tablespoons milk of choice
1 cup powdered sugar
¼ teaspoon vanilla extract
sprinkles,nuts, chocolate shavings, or sesame seeds for topping

2 cups mochiko sweet rice flour
2 cups white sugar
1 tablespoon baking soda
1 cup semi-sweet chocolate chips
2 (12 ounce) cans evaporated milk
1/2 cup margarine, melted
2 teaspoons vanilla extract
2 eggs, beaten

Steps:

  • Sift dry ingredients, mochiko, sugar and baking soda in a large bowl. Melt margarine and chocolate chips together and combine with evaporated milk, vanilla extract and eggs. Mix well and stir any ingredients until it becomes a smooth batter. Then pour into greased 9x13 pan. Bake in 350 degree pre-heated oven. 45-55 min, cool, then serve. Do not refrigerate.
