Stir two to three tablespoons of this tasty syrup into Very Refreshing Iced Tea or Lemonade.

Yield Makes about 1 1/2 cups

Number Of Ingredients 4

1 cup sugar*
1 cup water
1 cup loosely packed fresh mint leaves
Garnish: fresh mint leaves

Steps:

  • Stir together first 3 ingredients in a medium saucepan over medium-high heat. Bring to a boil, stirring occasionally, and boil 1 minute or until sugar is dissolved. Remove from heat, and let stand 30 minutes. Pour liquid through a wire-mesh strainer into a cruet or airtight container, discarding mint leaves. Cover and chill 4 hours. Garnish, if desired. Syrup may be stored in refrigerator up to 1 month.
  • *3/4 cup sugar/no-calorie sweetener may be substituted. For testing purposes only, we used Splenda Sugar Blend for Baking.

1 cup water
Stems from 1 bunch of fresh mint

Steps:

  • In a small saucepan, combine sugar, 1 cup water, and mint stems. Place over medium heat, and cook, stirring occasionally, until sugar is dissolved. Remove from heat; let cool. Strain through a sieve. Syrup can be stored in an airtight container in the refrigerator for about 2 weeks.
