Our lovely, light mini scones are an ideal afternoon treat for when you're expecting friends

Number Of Ingredients 4

100g (4oz) self-raising flour
25g (1oz) caster sugar
25g (1oz) unsalted butter
3tbsp milk plus a little extra for brushing

Steps:

  • Preheat oven to 220 C, 200 C fan oven, 425 F, gas 7. Sift the flour, sugar and a pinch of salt into a bowl. Rub in the butter until it resembles fine breadcrumbs.

  • Mix in the milk to form a soft dough. Knead lightly on a floured board, then pat into a round 1.5cm (3/4in) thick. Cut into 2.5cm (1in) rounds with a small pastry cutter. Place on a greased and floured baking sheet.

  • Brush with milk and bake for 8 to 10 minutes until well risen and golden brown. Cool slightly and dust with a little icing sugar before serving with good quality strawberry jam and clotted cream.

This was my first scone recipe and I have loved it ever since my mom taught me how to make it. It has a light cheese flavor which added to for you cheese lovers! It kind of reminds me of fast food biscuits, but with cheese and without the genetic engineering.

Number Of Ingredients 7

2 tablespoons butter
2 cups self-rising flour
1?½ teaspoons salt
½ cup freshly grated Parmesan cheese
½ cup milk
½ cup water
¼ teaspoon ground cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.
  • In a small saucepan, melt butter over low heat. In a large bowl, combine flour, salt and cheese. Make a well in the center of the flour mixture and add the butter, milk and water; stir gently to combine. Add water in small amounts until dough pulls together.
  • Knead dough on a lightly floured surface until smooth and press out to 3/4 inch thickness. Cut dough into rounds with a floured 1 1/4 inch cookie or biscuit cutter. Place rounds on prepared tray and sprinkle lightly with cayenne pepper.
  • Bake in preheated oven for 10 to 12 minutes. Handle scones gently until complete cool.
