9 creme-filled chocolate sandwich cookies or 18 vanilla wafer cookies
2 packages (8 ounces each) plus 1 package (3 ounces) cream cheese, softened
1 cup granulated sugar
1/4 cup unsweetened baking cocoa
2 teaspoons vanilla
3 eggs
3/4 cup whipping (heavy) cream
2 tablespoons granulated or powdered sugar

Steps:

  • Heat oven to 350°F. Line 18 medium muffin cups, 2 1/2x1 1/4 inches, with paper baking cups. Split sandwich cookies in half. Place 1 cookie half, middle side up, in each cup. Or place 1 wafer cookie, flat side down, in each cup.
  • In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Gradually beat in 1 cup sugar and the cocoa until fluffy. Beat in vanilla. Beat in eggs, one at a time, until well blended. Divide evenly among cups (cups will be almost full).
  • Bake cheesecakes 20 to 25 minutes or until centers are firm. Cool 15 minutes (cheesecake centers will sink while cooling). Refrigerate in muffin cups at least 1 hour; cover and refrigerate at least 1 hour longer before serving.
  • In chilled small bowl, beat all Whipped Cream ingredients with electric mixer on high speed until stiff. Spoon Whipped Cream on chilled cheesecakes. Cover and refrigerate any remaining cheesecakes.

12 reduced-fat vanilla wafers
1 (8 ounce) package reduced-fat cream cheese, softened
½ (8 ounce) package fat-free cream cheese, softened
3 ounces bittersweet or semisweet chocolate, melted and cooled
½ cup sugar
¼ cup nonfat milk
1?½ teaspoons vanilla extract
1 large egg white, lightly beaten
¼ cup ?nely chopped dried cherries or dried apricots
1 ounce Chocolate curls and/or small whole or sliced strawberries

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line twelve 2-1/2-inch muffin cups with foil or paper bake cups. Place 1 wafer in the bottom of each muffin cup. Set aside.
  • Beat both cream cheeses in a medium bowl with an electric mixer on medium speed for 30 seconds. Beat in chocolate, sugar, milk and vanilla until well combined. Stir in egg white. Stir in dried cherries (or apricots). Spoon filling into the prepared cups, filling each about 3/4 full.
  • Bake about 20 minutes or until set. Cool in muffin pan on a wire rack for 5 minutes. (Centers may dip slightly as they cool.) Remove cheesecakes from pan. Cool on a wire rack for 1 hour. Cover and chill for 3 to 24 hours.
  • If you like, garnish with chocolate curls and/or strawberries before serving.

Transfer to a bowl and pour in melted butter. Stir until crumbs are completely coated and moistened. Press about 1 tablespoon of crumb mixture into the bottom of each liner.  Make cheesecake: In a large bowl using a hand mixer (or in the bowl of a stand mixer using the paddle attachment), beat cream cheese, sugar, flour, cocoa powder, and salt until light and fluffy. Add eggs; beat until well combined. Fold in melted chocolate. Pour cheesecake filling over crust in prepared liners. Bake cheesecakes until only slightly jiggly in the center, 12 to 14 minutes.  Let cool for 5 minutes in the pan and then transfer to a rack to cool completely. Refrigerate until cold, at least 1 hour. Make chocolate ganache: Once cheesecakes are cold, add chocolate chips and heavy cream to a microwave-safe dish. Microwave in 10-second intervals until chocolate is melted; stir until smooth and creamy. Spread about 1 tablespoon chocolate sauce on top of each cheesecake. Return to refrigerator to let chocolate sauce set, about 10 more minutes. Make chocolate whipped cream: In a large bowl, beat heavy cream with chocolate syrup just until stiff peaks form, about 4 minutes. Transfer to a piping bag fitted with a star tip. Top each cheesecake with chocolate whipped cream and garnish with a piece of chocolate.
