TRADITIONAL MINCEMEAT PIE - JUST A PINCH RECIPES
Mother made this a lot when I was growing up and she also made mincemeat cookies. I admit they were never my favorites. I guess I ate them but sort of forgot about them over the years. Here is a recipe I was lucky enough to find online at the None Such website. You've heard the saying "easy as pie." This is where they got it! Steps:
- Place rack in lowest position in oven. Preheat oven to 425 degrees. Line 9" pie plate with pastry.
- Turn mincemeat into crust. Cover with top crust. Seal edges. Cut slits near center; seal and flute. Brush egg and water mixture over crust, if desired.
- Bake 25 to 30 minutes or until golden brown. Cool slightly. Garnish as desired.

THEY ARE A CAKE LIKE, SOFT COOKIE, AND LIKE A APPLE SPICE COOKIE.. (NOW I DONT TELL PEOPLE THEY ARE MINCEMEAT UNTIL AFTER THEY TASTE THEM BECAUSE THEY WON'T TASTE THEM IF YOU TELL THEM... - PRE HEAT OVEN TO 375F.
- IN LARGE MIXER BOWL, BEAT SHORTENING AND SUGAR UNTIL FLUFFY. ADD EGGS, BEAT WELL. STIR TOGETHER DRY INGREDIENTS: GRADUALLY ADD TO SHORTENING MIXTURE. MIX WELL. STIR IN MINCEMEAT. DROP BY ROUNDED TEASPOONFULS, 2 INCHES APART, ONTO GREASED BAKING SHEETS. BAKE 8 TO 10 MINUTES OR UNTIL LIGHTLY BROWNED.
- *** NOTE DO NOT OVER COOK THEY WILL GET TO DRY.. THEY ARE TO BE MOIST.. THIS IS A CAKE LIKE COOKIE.

- Scoop tablespoons of the mixture onto two lined baking sheets, leaving a bit of space between each so they can spread. Bake for 10-12 mins, or until the cookies are just firm around the edges but still soft in the middle – they will firm up as they cool. Transfer to a wire rack and leave to cool.
