Baked Cubed Pork Steak | Just A Pinch Recipes image

These are melt in your mouth, fork tender cubed steaks. I had no plans to post this, but it was so delicious, I am posting it so I won't forget how I made it.

- **cubed pork steak
- **tuscan seasoning
- **mrs. dash original blend
- **black pepper
- **olive oil

Steps:

  • Rub steaks on both sides with olive oil. Sprinkle Mrs. Dash, Tuscan seasoning and pepper on both sides. Place on a baking sheet that has been rubbed with olive oil.
  • Place on second from bottom rack of a 375° oven and cook for 15 min. Flip steaks over and cook another 10-15 min.

Delmonico steak is world-famous, first introduced by Delmonico's Restaurant in New York City in the mid-1800s. Over the years, Delmonico has applied to 8 different cuts of beef, though it's generally accepted to refer to a top grade of beef (such as rib-eye, New York or sirloin steak). This recipe is a classic method of preparing a quality Delmonico steak by slowly pan-searing the beef until it's sizzling hot, and then topping it with a pat of garlic-herb butter for added flavor. Try to buy grass-fed beef. Grass-fed steak is leaner and has about 100 fewer calories than a grain-fed steak.

STEAK
2 - grass-fed steaks, 1-inch thick (new york strip, rib-eye or sirloin)
1/2 teaspoon(s) black pepper
1 teaspoon(s) sea salt
- olive oil
HERBED BUTTER
1/2 cup(s) unsalted butter, room temperature
2 clove(s) garlic, finely minced
1 teaspoon(s) lemon juice
2 teaspoon(s) fresh parsley, finely chopped

Steps:

  • HERBED BUTTER: In a small bowl, combine the butter, garlic, lemon juice and parsley, and mix thoroughly. Form butter into a log shape and wrap in a sheet of waxed paper, and chill the herbed butter for at least an hour to allow the flavors to combine. (You can keep the butter chilled and slice off pieces as needed.)
  • STEAKS: Sprinkle the steaks with the salt and pepper, then rub each steak with a small amount of olive oil
  • Preheat a cast-iron skillet over medium heat. Once it's heated, turn the heat to low. Sear the steaks 3-5 minutes each side.
  • Reduce the heat as low as it will go, and slowly cook until the steak reaches desired internal temperature
  • Remove the steak from the skillet and allow it to rest 10 minutes.
  • While the steaks are resting, slice off two pieces of the herbed butter, and let one slice of herbed butter slowly melt on top of each steak. Serve hot.

  • Place steak in a shallow dish. In a small bowl, whisk 1/2 cup soy sauce, vinegar, honey, ginger and garlic. Pour half of the marinade over steak; turn to coat. Cover and refrigerate overnight. Cover and refrigerate remaining marinade. , Drain and discard marinade. Grill steak, covered, over medium heat or broil 3-4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes before slicing., Meanwhile, transfer reserved marinade to a small saucepan. Bring to a boil; cook until liquid is reduced by half. Set aside., In a large skillet, heat 1 tablespoon butter over medium-high heat. Pour eggs into skillet. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are completely cooked, remove to plate. Chop eggs into small pieces; set aside., In the same skillet, stir-fry rice in remaining butter over medium-high heat. Stir in the peas, onions and remaining soy sauce., Add eggs; cook and stir until heated through. Thinly slice steak across the grain; serve over rice. Drizzle with sauce mixture.

  • Off of the heat, add 1/3 cup Cognac to the pan and carefully ignite the alcohol with a long match or firestick. Gently shake pan until the flames die. Return the pan to medium heat and add the cream. Bring the mixture to a boil and whisk until the sauce coats the back of a spoon, approximately 5 to 6 minutes.
