Great way to make a nice dessert without turning on the oven. Found recipe in Simple & Delicious magazine, Mar '07 submitted E. Tomlinson

3 cups fresh blueberries (or frozen if desired)
3 tablespoons sugar
1 tablespoon cornstarch
1/3 cup old fashioned oats
1/3 cup packed brown sugar
3 tablespoons flour
2 tablespoons chopped almonds
1/4-1/2 teaspoon cinnamon
3 tablespoons cold butter (no exceptions)
vanilla ice cream (optional)

Steps:

  • In a greased 9-inch microwave safe pie plate, combine the blueberries, sugar and cornstarch.
  • Cover and microwave on HIGH for 7-8 minutes or until thickened, stirring twice.
  • In a small bowl, combine the oats, brown sugar, flour, almonds and cinnamon.
  • Cut in the butter to the oat mixture, until mixture resembles coarse crumbs.
  • Sprinkle the oat mixture over the blueberry mixture.
  • Microwave, uncovered, on HIGH for 2-3 minutes or until butter is melted.
  • Serve with ice cream, if desired.

This is an incredibly easy and delicious pie to make when blueberries are in season! I've included stove-top instructions, but the microwave makes it SO fast and easy.

Yield 1 9" pie, 8 serving(s)

Number Of Ingredients 9

2 cups blueberries
3/4 cup water
3/4 cup sugar
1/4 teaspoon salt
3 tablespoons cornstarch
1 tablespoon butter
1 teaspoon lemon juice
2 -4 cups fresh blueberries
1 9-inch baked pie crusts or 1 graham cracker crumb crust

Steps:

  • Combine dry ingredients thoroughly. (This keeps the cornstarch from clumping.).
  • Stir in berries and lemon juice.
  • Microwave about 5 minutes total, stirring every 30 seconds and crushing many of the blueberries, until thick.
  • Stir in butter and lemon juice.
  • Cool somewhat.
  • Gently stir in fresh blueberries and pour into prepared pie shell.
  • Refrigerate at least 4 hours before serving.
  • Top with sweetened whipped cream if desired.

Hard to believe, but you can microwave these muffins in just 2 minutes. I know, I know, I didn't believe it either, and I've been baking semi-professionally for 15 years. Great solutions for midsummer baking, and children can bake their own! The batter recipe is from the Enchanted Broccoli Forest by Mollie Katzen. I usually substitute whole wheat flour and a little flax seed meal for a portion of the white flour. The yield was supposedly 12, but I've never gotten more than 8 or 10 muffins from it.
