3 cups fresh blueberries (or frozen if desired)
3 tablespoons sugar
1 tablespoon cornstarch
1/3 cup old fashioned oats
1/3 cup packed brown sugar
3 tablespoons flour
2 tablespoons chopped almonds
1/4-1/2 teaspoon cinnamon
3 tablespoons cold butter (no exceptions)
vanilla ice cream (optional)

Steps:

  • In a greased 9-inch microwave safe pie plate, combine the blueberries, sugar and cornstarch.
  • Cover and microwave on HIGH for 7-8 minutes or until thickened, stirring twice.
  • In a small bowl, combine the oats, brown sugar, flour, almonds and cinnamon.
  • Cut in the butter to the oat mixture, until mixture resembles coarse crumbs.
  • Sprinkle the oat mixture over the blueberry mixture.
  • Microwave, uncovered, on HIGH for 2-3 minutes or until butter is melted.
  • Serve with ice cream, if desired.

When you're hankering for a quick, sweet little treat, try this easy berry cobbler you microwave in a mug.

4 teaspoons quick cooking oats
1?½ teaspoons whole wheat flour
1?½ teaspoons packed brown sugar (see Tip)
½ teaspoon whole flaxseeds
¼ teaspoon ground cinnamon
Pinch salt
1?½ teaspoons cold, unsalted butter
? cup fresh blueberries
½ teaspoon whole chia seeds
1 tablespoon frozen light whipped dessert topping
Pinch cinnamon

Steps:

  • In a small microwave safe bowl, combine the oats, flour, 1 teaspoon of the brown sugar, the flaxseeds, 1/4 teaspoon cinnamon, and the salt. Add butter. Using your fingers, knead together until thoroughly combined; set aside.
  • In an 8-ounce microwave-safe mug or 10-ounce ramekin, combine the blueberries, remaining 1/2 teaspoon brown sugar, and the chia seeds. Using a fork, mash the berry mixture.
  • Place the oat mixture and the berry mixture side by side in the microwave. Cook on 50% (medium) power for 1 1/2 minutes. Remove berry mixture from microwave. Cook oat mixture an additional 10 to 15 seconds on 100% (high) power. Let cool 1 minute. Stir oat mixture.
  • Pour oat mixture over berry mixture. Top with whipped topping and cinnamon.
