MEXICAN SWEET POTATO CANDY RECIPE | MYRECIPES

Yield about 5 dozen

Number Of Ingredients 6

2 cups firmly packed brown sugar
¾ cup evaporated milk
1 tablespoon butter or margarine
? teaspoon salt
½ cup mashed, cooked sweet potatoes
½ cup chopped pecans

Steps:

  • Combine sugar, milk, butter, and salt in a 2-quart saucepan. Cook over low heat, stirring until sugar dissolves. Wash off sugar crystals that have formed on sides of pan, using a brush dipped in cold water.
  • Continue to cook, stirring occasionally, until mixture reaches firm ball stage (244°). Remove from heat; cool to lukewarm (110°). Add sweet potatoes; beat at medium speed of an electric mixer until mixture thickens. Stir in pecans. Pour candy into a well-buttered large serving platter. Cool and cut into 1-inch squares.

I thought I would share some of my favorites, These are some that I have to make quite often. this is a hand me down recipe.

Prep Time 10 minutes

Cook Time 30 minutes

Yield 30 balls

Number Of Ingredients 8

1 lb powdered sugar
1/3 lb margarine, softened
1 1/2 teaspoons vanilla extract, pure
1/8 teaspoon almond extract, pure
1 1/2 cups sweet potatoes, baked
1 1/2 teaspoons milk
1 -1 1/2 cup angel flake coconut
1 teaspoon cinnamon

Steps:

  • Bake sweet potato as you would a plain potato.
  • When done use only insides of potato.
  • Measure out 1 1/2 potato let cool completely.
  • In a bowl Sift sugar, mix well with margarine, milk , cinnamon, almond extract, vanilla extract and cooled sweet potato.
  • Knead until smooth with your hands until mixed well.
  • Add coconut.
  • Shape into balls about 1 1/2 inches round.
  • Dust with powdered sugar.
  • Refrigerate.
  • makes around 25-30 balls.
