Tex-Mex Sloppy Joes Recipe: How to Make It image

Sloppy joes are a favorite of adults and kids. I deviated from the traditional recipe by adding a little Southwestern spiciness. —Geraldine Saucier, Albuquerque, New Mexico

Make this "taco on a bun" as zesty as you want, depending on the salsa's kick.

Provided by Patricia Carolan

Yield 6 servings (serving size: 1 sandwich)

Number Of Ingredients 9

2 cans kidney beans
1 clove garlic, minced
½ pound ground beef
1 teaspoon chili powder
½ teaspoon ground cumin, optional
6 French rolls, cut in half lengthwise
1?½ cups shredded lettuce (preferably green leaf or romaine)
¾ cup salsa
6 tablespoons shredded low-fat cheddar cheese

Steps:

  • Drain beans, reserving 1/4 cup of liquid in a small bowl, and rinse.
  • In a medium skillet, brown garlic and beef over moderate heat for approximately 5 minutes. Reduce heat to low and stir in chili powder, beans, liquid, and cumin (if desired); simmer for 3 minutes.
  • Hollow out the roll halves and toast lightly. Divide the shredded lettuce and the beef and bean mixture evenly among the bottom halves of the rolls; top each with 2 tablespoons of salsa and 1 tablespoon of cheddar cheese. Cover with top halves of rolls and serve.
  • How kids can help: Fill rolls with beef and bean mixture. Top with salsa, then with cheese; cover with top halves of rolls.

MEXICAN-STYLE SLOPPY JOES | RECIPES | WW USA
Lean ground beef, chunks of butternut squash, and corn kernels make up the base for this Mexican spin on sloppy Joes, and this version is ready in less than 20 minutes—perfect for a weeknight dinner. The vegetables not only boost the nutrition, but also add a new layer of flavor and complexity to the dish. The sloppy Joe sauce is made from salsa, chili powder, and ground cumin. The toasted, cheesy multigrain English muffins offer a sturdy base for the often-messy filling. You can swap in a whole-wheat hamburger bun for a nod to the traditional dish, if you like.
