1 tablespoon white vinegar
8 large eggs
2 teaspoons chili powder
1 teaspoon garlic powder
17 ounces prepared polenta, log
2 tablespoons olive oil
1 cup smoked cheddar cheese
2 cups salsa
1/2 cup sour cream
1 Hass avocado, diced
2 green onions, sliced

Steps:

  • To make eggs, fill a medium saucepan half way up with water; place over medium-high heat. Bring water to a boil and add vinegar; reduce heat to a simmer. Crack eggs, one by one, into a cup and slide gently into simmering water; cook until egg whites have set, about 3 to 4 minutes. Cook 4 eggs at a time. Remove eggs to a plate with a slotted spoon; cover to keep warm.
  • To make polenta: slice polenta into 8 rounds. Combine chili powder and garlic powder in a cup; dust mixture over polenta rounds. Place a large nonstick skillet over medium-high heat; add oil and cook polenta until brown on both sides, about 3 minutes per side. Remove from heat and keep warm until ready to use.
  • To assemble, place two polenta rounds on each of 4 plates. Top each with an egg, 2 T cheese, 1/4 cup of salsa, 1 T sour cream, avocado and green onion.

  • Set-up a double boiler. Bring the water in the bottom half to a simmer over medium-low heat. Beat egg yolks, lemon juice, and Worcestershire sauce together in the top of the double boiler until smooth. Stir 1 tablespoon melted butter into the egg mixture with a whisk to incorporate fully; repeat with remaining butter. Thin sauce with water as needed. Stir adobo sauce and salt into the sauce; remove from heat and cover to keep warm. Bring a saucepan of salted water to a simmer over medium-low heat; add vinegar. Stir the water in a clockwise motion. Gently crack an egg into the center of the water. The motion of the water will allow the egg whites to coat the yolk, rather than it breaking apart. Cook until whites are set, about 4 minutes; remove with a slotted spoon to a plate. Repeat with remaining eggs. While the eggs poach, heat a skillet over medium-high heat. Cook Canadian bacon in hot skillet until browned, 2 to 3 minutes per side. Place one half of an English muffin onto a plate. Layer a slice of Canadian bacon and a poached egg onto the muffin. Spoon Hollandaise sauce over the egg, bacon, and muffin; top with avocado slices, garnish with chives, and season with salt and pepper. Repeat assembly with remaining ingredients.
