5 cups water, or to taste
3 cucumbers, peeled and chopped
½ cup freshly squeezed lime juice
¼ cup granular sucralose sweetener (such as Splenda®), or to taste

Steps:

  • Blend 2 cups water, cucumbers, lime juice, and 2 tablespoons sweetener together in a blender until smooth. Pour into pitcher; add remaining water. Stir in additional sweetener to taste.

This refreshing cucumber-lime flavored cocktail is a great choice for warm summer evenings. You can easily make it a mocktail by substituting lime-flavored sparkling water for the tequila.

¾ cup water
½ cup honey
1/4 to 1/2 teaspoon crushed red pepper
1?¼ cups thinly sliced cucumber
1 cup lightly packed fresh mint sprigs
1 cup lime juice
1 cup tequila (see Tip)
2 cups club soda, chilled
Ice cubes
Lime wedges

Steps:

  • In a medium saucepan combine the water, honey and crushed red pepper. Bring to boiling over medium, stirring to dissolve honey. Remove from heat. Add cucumber. Cover and let stand 15 minutes. Place half of the mint in a 4-cup liquid measuring cup; crush against side with a muddler or the back of a spoon. Add cucumber mixture. Cover and chill 1 hour.
  • Strain cucumber mixture through a fine-mesh sieve into a pitcher. If desired, reserve some of the cucumber slices for garnishing cocktails. Discard the remaining strained solids.
  • Stir lime juice and tequila into strained liquid in pitcher. Slowly pour in club soda; stir gently. Serve in ice-filled glasses. Garnish with the reserved cucumber slices, the remaining mint and lime wedges.
