Vegan Cotija Cheese with Cashews | Foodaciously image

This vegan cotija cheese will bring the flavour of the classic Mexican cheese to your table, but it's dairy-free and oil-free. So easy to make!

Number Of Ingredients 6

200 g of Cashew Nuts
1 tbsp of Apple Cider Vinegar
2 tsp of Salt
2 tbsp of Nutritional Yeast
8 g of Agar Agar Powder
200 mL of Water

Steps:

  • Soak the cashews in a bowl of cold water for 6-8 hours or overnight.
  • In a food processor, blitz drained cashews with vinegar, salt, nutritional yeast, agar-agar, and water until smooth.
  • Next, bring the cashew cheese to a gentle boil, and cook it for 5 minutes while always stirring until thick.
  • Divide the cheese among ramekins and let it harden in the fridge for at least a couple of hours or overnight.
  • Loosen the cheese from its mould and enjoy it.
