I have served this appetizer many times to rave reviews! (one time I never made it out of the kitchen at a party--it was eaten by the kitchen "crew"!) Can be served warm or cold.

Number Of Ingredients 4

Ingredients

8 ounces grated cheddar cheese
8 ounces grated monterey jack cheese
3 eggs
1/2 cup chunky, thick salsa

Steps:

In a large bowl, mix cheeses together.
Put 1/2 the cheese mixture in a greased 9X9" pan.
In a different bowl, mix the eggs and salsa together.
Pour this mixture on top of the cheese in the pan.
Sprinkle the remaining cheese on top and bake at 350F for 30 minutes.
Cool and cut into squares to serve.
Tastes great cold.

6 (6") fajita size flour tortillas
1 3/4 cup refried beans
8 tbs thick and smooth taco sauce
8 tbs chopped green bell pepper
8 tbs chopped red bell pepper
8 tbs (about 3) sliced red onions
1/4 tsp crushed red pepper (optional)
2 cups 4 cheese Mexican blend shredded cheese

Steps:

PREHEAT oven to 400Â° F. Place tortillas on baking sheet(s). BAKE for 3 to 4 minutes or until crisp. SPREAD refried beans evenly on tortillas. Spread 1 tablespoon taco sauce over beans. Top with bell peppers, green onions and crushed red pepper. Sprinkle with cheese. BAKE for 7 to 8 minutes or until cheese is melted. Cut into wedges.

"In small bowl, stir together crushed tortilla chips and butter. Press onto bottom of 9-inch springform pan. Bake at 325 degrees for about 10 minutes. Cool slightly. In large bowl, combine cream cheese and taco seasoning mix. Beat at medium speed, scraping bowl often, until well mixed, about 1-2 minutes. Add eggs. Continue to beat until smooth. Stir in cheese and salsa. Carefully spoon cream cheese mixture over crust spreading to smooth. Bake at 325 degrees for 30-35 minutes or until edges are set (center of cheesecake will be slightly soft). Top with sour cream. Cool completely. Cover; refrigerate until serving time (overnight is ideal). Just before serving, remove sides of springform pan; garnish with green onions, ripe olives and tomatoes. Serve with tortilla chips. Enjoy!"
