This is a favorite dish of mine that I picked up from my grandmother in Mexico. It is very tasty if done right. Serve with either corn or flour tortillas.

1 pound trimmed skirt steak
1 (12 ounce) bottle beer
? cup freshly squeezed key-lime juice
1 onion, cut into rings
1 large green bell pepper, cut into rings
1 teaspoon onion powder
1 teaspoon lemon pepper seasoning
1 teaspoon garlic powder
1 teaspoon garlic salt

Steps:

  • Stir together the beer, lime juice, onion, and bell pepper in a large glass or ceramic bowl. Pound the skirt steaks to 1/4 inch thick, and mix into the marinade. Cover the bowl with plastic wrap, and marinate in the refrigerator for 2 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the skirt steak from the marinade. Discard the remaining marinade. Mix the onion powder, lemon pepper, garlic powder, and garlic salt together in a small bowl. Sprinkle the steaks with the spice mix on all sides.
  • Cook the steaks until they are firm, hot in the center, and well done, about 7 minutes per side. An instant-read thermometer inserted into the center should read 155 degrees F (65 degrees C).

When we're in the mood for Mexican food, I'll reach for this recipe. Much of the meal can be prepared in advance, so I can avoid the last-minute rush at dinnertime.

1/4 cup vegetable oil
3 tablespoon red wine vinegar
1-1/2 teaspoons sugar
1-1/2 teaspoons chili powder
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds boneless skinless chicken breasts, cut into thin strips
8 flour tortillas (10 inches), warmed
2 cups shredded lettuce
2 cups shredded cheddar or Monterey Jack cheese
1 large tomato, diced
3/4 cup sour cream
Taco sauce

Steps:

  • In a glass bowl or resealable plastic bag, mix first eight ingredients. Add chicken; toss to coat. Cover or close bag and refrigerate for 4 hours. Drain, discarding marinade. , Saute chicken in a large skillet over medium heat for 6-7 minutes or until juices run clear. Spoon about 1/2 cup chicken down the center of each tortilla. , Top with lettuce, cheese, tomato, sour cream and taco sauce. Fold in sides of tortilla and serve immediately.

In a skillet, saute onion and peppers in 1 tablespoon oil until crisp-tender; remove and set aside., Drain and discard marinade from beef. In the same skillet, cook beef in remaining 1 tablespoon oil until it reaches desired doneness, 2-4 minutes. Return vegetables to pan; heat through. Spoon meat and vegetables onto tortillas. If desired, top with cheese and serve with picante sauce and sour cream.
