Roast potatoes but not as you know them! These wonderful crunchy potato spirals have an incredible dusting of Parmesan, cumin, garlic powder and smoky paprika.

Number Of Ingredients 8

6 medium Maris Piper potatoes
olive oil
50 g Parmesan cheese plus extra for grating
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon garlic powder
100 ml natural yoghurt
1 lemon

Steps:

    1. Preheat the oven to 190°C/375°F/gas 5.
    2. Carefully insert a metal skewer lengthwise into the end of the potato and gently push it all the way through.
    3. Using a sharp knife, make a small cut at one end of the potato until you hit the skewer, then carefully twist the potato round to continue the cut all the way along, creating a spiralised effect.
    4. Gently pull out the spirals to ensure even gaps along the length of the skewer, and brush well with 4 tablespoons of olive oil. Repeat with the remaining potatoes.
    5. Finely grate the Parmesan into a bowl, then add in the paprika, cumin, garlic powder and a good pinch of sea salt and black pepper. Sprinkle the mixture over the potato spirals and line up on a baking tray. Bake for 50 minutes, or until cooked through and crispy.
    6. To make the dip, place the yoghurt in a bowl, finely zest over the lemon and squeeze in half the juice, then mix well. Season to perfection.
    7. Finely grate a little extra Parmesan over the potato spirals and serve with the zesty yoghurt for dipping.

This cake is a favourite afternoon pick-me-up, but you can use decaf coffee if you are baking for children or anyone sensitive to caffeine.

Number Of Ingredients 12

175 g butter (at room temperature) plus extra for greasing
75 g walnuts plus extra to garnish
175 g sugar
3 large free-range eggs
150 g self-raising flour
½ teaspoon baking powder
50 ml cold espresso
65 g unsalted
125 g icing sugar
40 ml strong espresso
100 g icing sugar
20 ml strong espresso

Steps:

    1. Preheat the oven to 180ºC/gas 4. Grease and line the bases of 2 round 20cm cake tins.
    2. In a food processor, blitz two-thirds of the nuts to powder. Cube, then cream the butter in a bowl with the sugar until light and fluffy. Gradually beat in the eggs then add the blitzed walnuts and gently stir through.
    3. Fold the flour, baking powder and a pinch of sea salt through with a large metal spoon until just incorporated.
    4. Roughly chop the rest of the walnuts and stir through the cake mixture along with the espresso.
    5. Evenly divide the mixture between the cake tins and bake in the oven for 20 to 25 minutes, or until lightly golden and cooked through when tested with a skewer.
    6. Cool the cakes in the tins for 5 minutes, then transfer to a wire rack to cool completely.
    7. For the filling, cube and put the butter in a bowl. Sift in the icing sugar, beat until fluffy, then beat in the coffee.
    8. For the icing, sift the icing sugar into a bowl and beat in the coffee to make a thick, smooth icing.
    9. Place one of the cakes on a plate or board and spread with the coffee filling. Top with the second cake and drizzle over the icing.
    10. Decorate the cake with the remaining walnuts as they are, or lightly caramelised. To do this, melt sugar over a medium heat, without stirring, then carefully toss the nuts in briefly to coat. Cool the nuts on a wire rack before using.

    1. Preheat the oven to 180ºC/gas 4. Line a 26cm x 37cm swiss roll tin with baking paper, making sure it is higher than sides.
    2. Blitz the walnuts in a food processor until finely ground, then add the baking powder and a pinch of sea salt.
    3. Separate the eggs. Use an electric beater to whisk the egg whites to firm peaks. Gradually beat in half the sugar, till glossy.
    4. In another bowl, whisk the egg yolks with the remaining sugar until pale and thick. Gently fold in the walnut mixture, flour and cocoa. Using a large metal spoon, fold the egg white mixture into the nut mixture, a little at a time. Spoon into the tin and bake for 25 minutes, until an inserted skewer comes out clean and the sponge is springy.
    5. While still warm, lay a sheet of baking paper over the sponge and flip it out of the tin. Peel off the tin lining and leave to cool for 5 to 10 minutes. Drizzle the cake with the marsala and roll from the longest edge, the paper inside. Cover with a damp cloth. Melt the chocolate in a bowl set over a pan of simmering water. Put the icing sugar in a food processor with the butter and blitz to cream. Add the slightly cooled chocolate and pulse till smooth. Place in a bowl and chill in the fridge for 30 minutes. Whisk the cream until just starting to peak and then gently stir in the chestnut purée. When the sponge is cool, unroll and spread with the cream, leave a 2cm border around the edge. Re-roll the cake, without the paper but using it as a guide.
    6. Spread the chocolate icing on top. Make wood-effect with a fork, then dust with icing sugar.
