1 cup butter
2 cups brown sugar
½ cup corn syrup
1 teaspoon salt
½ teaspoon baking soda
1 teaspoon vanilla extract
5 quarts popped popcorn

Steps:

  • Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
  • In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
  • Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

2 tablespoons unsalted butter, plus more for greasing dish 
10 caramel candies (such as Kraft)
1 (10-oz.) pkg. marshmallows
12 cups popped popcorn (from 1 [5-oz.] pkg., such as Smartfood Smart 50 Sea Salt Popcorn) 
¾ teaspoon kosher salt

Steps:

  • Melt butter in a large saucepan over medium. Add caramels and 2 tablespoons water. Cook, stirring often with a silicone spatula, until caramels melt completely, about 3 minutes. Add marshmallows. Cook, stirring constantly, until smooth, 1 to 2 minutes. Remove from heat. 
  • Working quickly, fold in popcorn and kosher salt until coated. Press into a lightly greased (with butter) 13- x 9-inch baking dish, and let stand until completely set, about 10 minutes. Cut into 18 bars, and serve. Store in an airtight container at room temperature up to 1 week.
