2 tablespoons butter or 2 tablespoons oleo
2 tablespoons flour
1/2 teaspoon salt
1 cup milk

Steps:

  • Melt butter over low heat in sauce pan.
  • Blend in flour and seasoning over low heat, stirring constantly, until mixture is smooth and bubbly.
  • Allow to cook for at least 1 minute to eliminate raw flour flavor.
  • Remove from heat, SLOWLY add milk, stirring constantly to make a smooth paste; stir in remaining milk.
  • Return to heat, stirring constantly.
  • Bring to a boil again and keep stirring until thickened.
  • If you want cheesy white sauce, add 1/2 cup shredded cheese (you can add as much cheese as you like to make it as cheesy as you wish).
  • Cover pan with tight fitting lid to prevent film formation until sauce is to be used.
  • Use on creamed and scalloped foods, sauces, gravies and in vegetable dips.

Steps:

  • Take a saucepan and half fill it with cold water from the tap. Gently lower the eggs into the saucepan one at a time.
  • Place the pan over a medium heat. When the water reaches a simmer, start the timer so you can precisely time the cooking process. If you gently stir the eggs in a clockwise direction, the movement of the water will help centre the yolks.
  • Simmer the eggs for 5 minutes for medium boiled eggs that have well set whites and thick, almost runny yolks.
  • Use a large spoon to remove the eggs from the water.
  • Cool the eggs by running them under cold tap water for 30-60 seconds or placing them in a bowl of iced water.
