SIMPLE MEDITERRANEAN TACOS RECIPE - MISSION FOODS



Simple Mediterranean Tacos Recipe - Mission Foods image

6 Organic White Corn Tortillas
2 tbsp olive oil
quarter cup lemon juice (about half a lemon, juiced)
half cup dry quinoa
quarter cup mint leaves
1 cucumber
1 tomato
1 tsp minced garlic
baby spinach
salt and pepper
feta cheese (optional)
avocado (optional)

Steps:

  • Slice chicken into 1/4-1/2 inch thick strips.
  • Transfer to a bowl and toss with olive oil and lemon juice
  • Heat medium-sized skillet
  • Add chicken mixture to skillet and sprinkle with salt and pepper
  • Cook, stirring occasionally until chicken is done through, and moisture is mostly evaporated. It’s nice if you can let the moisture evaporate out and get some brownness on the chicken strips.
  • While chicken is cooking, rinse quinoa and cook in 1 cup of water
  • While chicken and quinoa are cooking, chop mint, cucumber, and tomatoes.
  • When quinoa is done, mix in minced garlic and chopped mint leaves
  • Heat tortillas by removing from package, placing on a plate, covering with a second plate, and microwaving on high 30-45 seconds, or heating one at a time on a hot skillet.
  • Layer toppings on tortilla as desired, and enjoy!

4 Toufayan Bakery Pita Breads
2 chicken breast
1 tbsp olive oil
1/2 tsp salt
1/2 tsp Pepper
1 tsp Oregano
Artichoke Hearts
Crumbled Feta cheese
hummus
cucumbers, diced
Tomatoes, diced
Lettuce

Steps:

  • Heat the oven to 450 degrees.
  • Place the chicken breast in a baking dish and brush with olive oil.
  • Sprinkle with the salt, pepper and oregano.
  • Bake for 15-20 minutes, or until the chicken is cooked through and no longer pink. (Thicker breast will take longer).
  • Remove from oven and slice into strips.
  • While the chicken is cooking prepare the toppings by chopping and dicing the vegetables.
  • Warm the pita bread in the oven or in the microwave.
  • Spread a good amount of hummus on the bottom of each pita bread.
  • Top with the chicken, lettuce, artichoke hearts, tomato, cucumber and feta cheese.
  • Fold up like a taco and enjoy!
