BBQ Chicken Drumsticks – Instant Pot Recipes image

4-10 chicken drumsticks
1/4 cup sweet paprika
4 1/2 teaspoons black pepper (freshly ground)
1 tablespoon salt
1 1/2 teaspoons celery salt
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dry mustard
1 1/2 teaspoons ground cumin

Steps:

  • Add 3/4 cup of water in the Instant Pot. Place the trivet inside.
  • Place the chicken drumsticks on the trivet. Close the lid tightly and close the vent.
  • Press Poultry or Pressure Cook function on the Instant Pot and set the time to 20 minutes.
  • Preheat the oven to Broil. Line a cookie sheet with parchment paper.
  • When the timer goes off, release pressure naturally. Open the lid and take out the drumsticks.
  • Coat the drumsticks with the BBQ rub evenly.
  • Place the drumsticks on the lined cookie sheet. Broil the drumsticks for 2 minutes per side or until the skin is browned. Be careful not to burn them.
  • Serve immediately. Enjoy!

Oven Roasted Chicken Legs - either thighs, drumsticks, or even whole; can be the easiest dinner one can make when the time is scarce. 5 minutes prep time is all you'll need.

2 Chicken Thighs
4 Chicken Drumsticks
2 tbsp Olive Oil (Extra Virgin)
2 tbsp Lemon Juice
1 teaspoon Salt (Himalayan or Kosher)
1/2 teaspoon Black Pepper (Freshly grounded)
2 cloves Garlic (Minced)
1 teaspoon Sweet Paprika
1/2 teaspoon Turmeric
1/2 teaspoon Oregano (Dried)
1/2 teaspoon Thyme (Dried)
Pinch Cayenne Pepper
2 tbsp Butter (optional for a crispy skin)

Steps:

  • Preheat the oven to 425F.
  • In a bowl combine: olive oil, lemon juice, garlic, salt, pepper, 1/2 teaspoon of sweet paprika, turmeric, oregano, thyme and cayenne;
  • Place the chicken in the oven-safe dish like casserole or cast-iron skillet;
  • Pour the mixture over the chicken and rub it on both sides; (This can be done a night before and kept refrigerated before cooking);
  • Place the chicken skin side up and sprinkle with the remaining 1/2 teaspoon of sweet paprika (for more intense color); Transfer the casserole to the hot oven.
  • Roast the chicken for 40-45 minutes or until the internal temperature reaches 165F;
  • After about 20 minutes of roasting, you can add a little pat of butter on each piece of chicken for crispier skin. It is an optional step and can be omitted;
  • Once the chicken reaches 165 F remove from the oven and let rest for 5 minutes before serving.

  • Make the spice mix by combining the paprika, cayenne, thyme, garlic granules, onion granules and celery salt in a bowl. Season and mix to combine. Add half the spice mix to a large bowl with the buttermilk and chicken. Mix to coat the chicken, then cover and leave to marinate in the fridge overnight. Reserve the remaining spice mix. 

    Preheat the oven to 220°C/200°C fan/gas mark 6. Remove the marinated chicken from the fridge. Mix the reserved spices with the flour, and put the beaten eggs, breadcrumbs, and spiced flour in three separate bowls large enough to dip the chicken in.

    Take each piece of marinated chicken, dip in the spiced flour first, then the egg mixture, and finally in the breadcrumbs to coat thoroughly. Tap to remove excess crumbs and place on a large baking tray. Once all the chicken thighs are coated, bake in the oven for 40-50 minutes, until dark golden and cooked through.

    When the chicken has been in the oven for 15 minutes, bring 400ml water to the boil in a saucepan. Add the rice, cover and cook for 10 minutes. Remove the rice from the heat and leave to steam with the lid on for another 10 minutes.

    Remove the lid and fold through the beans, coriander, carrot, cabbage and lime juice, taste and check for seasoning. Serve the chicken with the warm rice salad.
