Steps:
- Preheat the oven to 325 degrees F.
- Melt the butter in a saucepan, add the onions and garlic, and saute until soft. Set aside to cool completely.
- Combine the ground pork, ground chicken, diced chicken and chicken livers in a large bowl. Mix together until well incorporated. Sprinkle with salt and pepper. Add the sherry, cream, parsley, shallot, thyme, eggs, and the sauteed onion and garlic. Mix together well.
- Line a 9-by-5-by-3-inch loaf pan with the bacon slices, leaving some overhang. Press the meatloaf mixture into the pan and cover with the overhanging bacon.
- Set the loaf pan into a deep baking dish; fill the baking dish one-third of the way up with warm water. Transfer to the oven and bake until the meatloaf reaches an internal temperature of 155 degrees F, about 1 hour 30 minutes.
- Let cool, then invert; it should slide right out. The Hunk-a-Meat is ready to be served!
