4 tablespoons unsalted butter
1 cup minced onion 
2 tablespoons minced garlic 
2 pounds coarsely ground pork 
1 pound coarsely ground chicken thigh meat 
1/2 pound chicken thighs, diced 
1/2 pound chicken livers, diced 
Salt and pepper

1 cup dry sherry 
1/2 cup whipping cream 
4 tablespoons chopped fresh parsley 
2 tablespoons minced shallot 
3 teaspoons chopped fresh thyme 
3 large eggs 
15 to 20 slices bacon

Steps:

  • Preheat the oven to 325 degrees F.
  • Melt the butter in a saucepan, add the onions and garlic, and saute until soft. Set aside to cool completely.
  • Combine the ground pork, ground chicken, diced chicken and chicken livers in a large bowl. Mix together until well incorporated. Sprinkle with salt and pepper. Add the sherry, cream, parsley, shallot, thyme, eggs, and the sauteed onion and garlic. Mix together well.
  • Line a 9-by-5-by-3-inch loaf pan with the bacon slices, leaving some overhang. Press the meatloaf mixture into the pan and cover with the overhanging bacon.
  • Set the loaf pan into a deep baking dish; fill the baking dish one-third of the way up with warm water. Transfer to the oven and bake until the meatloaf reaches an internal temperature of 155 degrees F, about 1 hour 30 minutes.
  • Let cool, then invert; it should slide right out. The Hunk-a-Meat is ready to be served!
