Cook mini meat loaves in single-serving portions for super juicy meat loaf in half the usual cooking time.

½ cup ketchup
1?½ tablespoons Dijon mustard
1 pound ground sirloin
¾ cup finely chopped onion
¼ cup seasoned breadcrumbs
½ teaspoon salt
½ teaspoon dried oregano
? teaspoon black pepper
1 large egg, lightly beaten
Cooking spray

Steps:

  • Preheat oven to 400°.
  • Combine ketchup and mustard, stirring well with a whisk. Reserve 2 1/2 tablespoons ketchup mixture. Combine remaining ketchup mixture, beef, and next 6 ingredients (beef through egg) in a large bowl, stirring to combine.
  • Divide beef mixture into 4 equal portions. Shape each portion into a 4 x 2 1/2-inch loaf; place loaves on a jelly roll pan coated with cooking spray.
  • Spread about 2 teaspoons reserved ketchup mixture evenly over each loaf. Bake at 400° for 25 minutes or until done.

1 egg
3/4 cup milk
1 cup shredded cheddar cheese
1/2 cup Italian seasoned breadcrumbs
1 teaspoon salt
1 lb ground beef
2/3 cup ketchup
1/4 cup packed brown sugar
1 1/2 teaspoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the egg, milk, cheese, breadcrumbs and salt. Add the ground beef, mixing well, and form this mixture into six to eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
  • In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes.
