Nonstick cooking spray, for the sheet pan
1/2 cup dry breadcrumbs 
1 cup milk 
6 slices white sandwich bread 
3 pounds ground beef 
1 cup grated Parmesan 
1 1/2 teaspoons seasoned salt, such as Lawry's 
1/2 cup minced fresh flat-leaf parsley 
Freshly ground black pepper 
4 large eggs, beaten 
1 cup ketchup
1/2 cup brown sugar 
2 tablespoons balsamic vinegar 
1 tablespoon Worcestershire sauce 
6 slices regular bacon, cooked crisp, cooled and chopped 
Mashed potatoes and chopped fresh flat-leaf parsley, for serving 

Steps:

  • For the meatloaf: Preheat the oven to 400 degrees F. Coat a half-sheet pan with cooking spray and sprinkle with the breadcrumbs, which will absorb the juices during cooking.
  • Pour the milk over the bread in a bowl and allow it to soak up the milk. Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, parsley and pepper in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.
  • Pat the mixture evenly into the prepared sheet pan, spreading all the way to the edges and corners.
  • Next, make the glaze: Whisk together the ketchup, brown sugar, balsamic vinegar and Worcestershire sauce in a bowl until well combined. Brush the mixture evenly over the top of the meatloaf. Sprinkle with the bacon.
  • Bake until the meat is cooked through and slightly browned, 20 to 25 minutes.
  • Remove from the oven, then cut into squares and serve with the mashed potatoes. Garnish with the chopped parsley.

1?½ cups panko, divided
¾ cup finely chopped yellow onion (from 1 small onion)
2 ounces Parmesan cheese, grated (about ½ cup)
½ cup whole milk
¼ cup chopped fresh flat-leaf parsley leaves
3 large garlic cloves, minced
2 large eggs, beaten
2 tablespoons dried Italian seasoning
2 tablespoons Worcestershire sauce
2 pounds 90/10 lean ground beef
1 pound ground pork
1 tablespoon plus 1 teaspoon kosher salt, divided
½ cup ketchup
2 tablespoons packed light brown sugar
1?½ tablespoons apple cider vinegar
½ teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 375°F with racks in center and upper third positions. Lightly grease a 13- x 9-inch rimmed baking sheet with cooking spray; sprinkle ½ cup of the panko evenly on bottom of baking sheet. Stir together onion, Parmesan, milk, parsley, garlic, eggs, Italian seasoning, Worcestershire sauce, and remaining 1 cup panko in a large bowl to combine. Add beef, pork, and 1 tablespoon of the salt to mixture, stir to combine. Transfer meatloaf mixture to baking sheet, and press into an even layer out to edges of baking sheet.
  • Whisk together ketchup, brown sugar, vinegar, black pepper, and remaining 1 teaspoon salt in a medium bowl. Spread ketchup mixture evenly over meatloaf. Bake on center rack in preheated oven until cooked through and a thermometer inserted in thickest portion registers 160°F, about 40 minutes. Remove from oven, and turn oven to broil. Broil on top rack until glaze becomes caramelized, about 3 minutes. Remove from oven, and let stand 5 minutes before serving.
