- In 12-inch nonstick skillet, combine potatoes, soup and water; stir gently to mix. Bring to a boil. Reduce heat to low; simmer 5 minutes, stirring occasionally.
- Stir in broccoli and meatballs; simmer 10 to 15 minutes or until broccoli and potatoes are tender, stirring occasionally.
- Stir in sour cream; cook just until thoroughly heated, stirring occasionally.

Meatballs, green beans and potatoes happily coexist while roasting together on a large sheet pan. Seasoned with fresh rosemary and Italian seasoning and served with pasta sauce and Parmesan, this one-dish meal is one you'll want to make again and again.

- Preheat oven to 425 degrees F. Place potatoes in a 15x10-inch baking pan. Drizzle with 2 teaspoons of the oil and sprinkle with 2 of the garlic cloves, the rosemary, 1/2 teaspoon of the salt and 1/4 teaspoon of the black pepper; toss to coat. Roast 10 minutes.
- Meanwhile, place oats in a food processor. Cover and process to a coarse powder. In a large bowl combine oat powder, egg white, onion, Italian seasoning, crushed red pepper, 1 of the garlic cloves, 1/4 teaspoon of the salt and 1/4 teaspoon of the black pepper. Add ground beef; mix well. Using 1/4 cup mixture for each, shape into eight meatballs.
- In a medium bowl combine the remaining 2 teaspoon oil, 1 clove garlic and 1/4 teaspoon each salt and black pepper. Add green beans, toss to coat.
- Push potatoes to one end of baking pan. Arrange meatballs in other end and mound beans in center of pan.
- Roast 20 to 25 minutes more or until meatballs are done (160 degrees F) and vegetables are tender, rotating pan after 10 minutes and spooning pasta sauce over meatballs the last 2 to 3 minutes of roasting.
- Sprinkle meatballs with cheese and basil. If desired, serve with additional pasta sauce.

- Make the mashed potatoes: Place potatoes in a large pot and fill with enough water to cover. Bring to a boil over high heat, then continue to boil until potatoes are fork tender, 10 to 15 minutes. Drain. Add butter and cream to potatoes and season with salt and pepper. Using a potato masher or hand mixer, mash until you reach desired consistency. Adjust seasonings if necessary, then cover and set aside. Make the meatballs: Preheat oven to 375º and line a baking sheet with parchment. Add beef, pork, egg, salt, pepper, allspice, and nutmeg to the mixing bowl and thoroughly mix together. Form 2 teaspoon-sized meatballs and place onto prepared baking sheet, 1/2" apart, then bake until just cooked through, 10 to 12 minutes. Make the gravy: In a large saucepan over medium heat, melt remaining tablespoon butter and whisk in flour. Continue to whisk 1 minute, then slowly whisk in beef broth, making sure to whisk any lumps. Season with salt and pepper. Simmer until gravy is thick enough to coat the back of a wooden spoon. Remove from heat and stir in cream, if using. Add meatballs to the gravy and toss together. Spread mashed potatoes on a large platter and top with meatballs. Ladle more gravy over the top and garnish with chives.
