2 pounds ground beef (preferably chuck)
1/2 cup panko or other breadcrumbs
1/2 cup whole milk
2 cloves garlic, minced
Kosher salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1/2 onion, diced
1 24-ounce jar marinara sauce
24 dinner rolls
2 cups grated mozzarella cheese

Steps:

  • Combine the beef, breadcrumbs, milk, garlic, 1/2 teaspoon salt, and pepper to taste in a large bowl and knead the mixture together with your hands. Roll into heaping-tablespoon-size balls.
  • Heat 2 tablespoons olive oil in a large nonstick skillet over medium heat. Add the onion and cook, stirring, until slightly softened, about 2 minutes; remove to a plate. Heat the remaining 1 tablespoon olive oil in the skillet over medium heat. Add the meatballs and cook, turning, until browned all over, about 1 minute. (You might have to do this in 2 batches.)
  • Pour in the marinara sauce and return the onion to the skillet; gently stir. Cover and simmer 20 minutes.
  • When ready to serve, split the dinner rolls and sprinkle some mozzarella on the bottom rolls. Top each with a meatball, some sauce and more mozzarella and sandwich with the top rolls.

1 lb. Ground Chuck Or Ground Beef
1/2 c. Panko Or Other Bread Crumbs
1 clove Garlic, Minced
1/2 tsp. Salt
Freshly Ground Black Pepper
1/2 c. Milk
2 tbsp. Olive Oil
1/2 whole Medium Onion, Diced
1 jar (large) Marinara Sauce
12 whole Dinner Rolls (or Slider Rolls)
4 slices Provolone Cheese, Cut Into Four Wedges Each

Steps:

  • Mix meat with bread crumbs, garlic, salt, pepper, and milk. Knead together with hands. Roll into heaping tablespoon-sized rolls.Heat olive oil in a large skillet over medium heat. Add onions and cook for one minute. Add meatballs between the onions and brown for one minute. (You might have to do this in two batches, depending on the size of your skillet.)Pour in jar of marinara; shake pan gently to mix. Put on lid and allow to simmer for 20 minutes.When ready to serve, cut each dinner roll in half. Place a wedge of Provolone on the top and bottom of each roll. Spoon a meatball with the sauce onto the bottom bun; top with the top bun.Serve immediately!

Add the meatballs, about eight at a time, turning to brown on all sides (they’ll finish cooking in the sauce later). Remove and drain on a paper towel-lined plate after each batch. Set meatballs aside. To make the sauce: in the same pot, add the onions and garlic and cook for a few minutes, or until translucent. Pour in crushed tomatoes, whole tomatoes with their juices and wine, if using. Add the red pepper flakes (as desired), parsley, salt, pepper and sugar. Stir to combine and cook over medium heat for 20 minutes. Add the meatballs to the pot and stir gently into the sauce. Reduce the heat to a simmer and cook for 30 minutes, stirring very gently a couple of times. Just before serving, stir in the basil, if using. Serve over cooked spaghetti and sprinkle with extra parmesan.
