This simple meatball recipe is delicious by itself, in a soup, or on top of spaghetti.

2 lbs ground turkey (dark meat is better but up to you) 2 tbsp olive oil 2 large eggs 1/2 cup gluten-free bread crumbs (If you use slices of bread
then use 2 slices of gluten-free bread and chop into fine crumbs) 1/2 cup chopped fresh parsley 1 tbsp salt 1 tsp ground fennel 1 tsp freshly ground black pepper 1 peeled and shredded granny smith apple (optional)

Steps:

  • 1. Preheat the oven to 450°F. Drizzle the olive oil into a 9×13-inch baking dish and use your hand to evenly coat the entire surface. Set aside. 2. Combine the ground turkey, eggs, breadcrumbs, parsley, salt, fennel, and pepper in a large mixing bowl and mix by hand until thoroughly incorporated. 3. Roll the mixture into round, golf ball-size meatballs (about 1 1/2 inches), making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another. 4. Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165°F. 5. Allow the meatballs to cool for 5 minutes in the baking dish before serving. Makes about 2 dozen 1 1/2-inch meatballs.

1 lb lean ground turkey
1/2 cup Progresso™ Italian style bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon onion powder
1 teaspoon garlic salt
1 teaspoon Italian seasoning
1/4 cup milk
1 egg, beaten

Steps:

  • Heat oven to 375°F. Spray large cookie sheet with cooking spray.
  • In large bowl, mix turkey, bread crumbs, cheese, onion powder, garlic salt and Italian seasoning. Add milk and egg; mix until just combined.
  • Shape mixture into 15 balls of slightly less than 1/4 cup each. Place on cookie sheet.
  • Bake 16 to 20 minutes or until thermometer inserted in center of meatballs reads at least 165°F. Serve with pasta and marinara sauce, or use in your favorite meatball dinner.
