4 1/2 teaspoons ground coriander
2 teaspoons turmeric
1 1/2 teaspoons cumin seeds
1/2 teaspoon whole black peppercorn (1/2 to 1)
1/2 teaspoon crushed red pepper flakes (1/2 to 1)
1/2 teaspoon cardamom, whole,without pods
1/2 inch cinnamon stick
1/4 teaspoon whole cloves
1/4 teaspoon ground ginger

Steps:

  • In a blender container, place all.
  • Cover and grind for 1 to 2 minutes or till mixture is a fine powder.
  • Store spice mixture in airtight container in cool dry place.

1kg chuck steak
2 tablespoons oil
2 onions, chopped
? cup Madras curry powder
¼ teaspoon chilli powder
2 cloves garlic, crushed
6 teaspoons tomato paste
410g can tomatoes
¾ cup beef stock
1 teaspoon salt
2 tablespoons plain flour
¾ cup milk

Steps:

  • 1. Cut steak into 2.5cm cubes. Heat oil in large pan, add onions, cook until soft. Add curry powder, chilli powder, garlic and meat cubes; stir until meat is coated and browned.

    2. Add tomato paste, undrained, crushed tomatoes, stock and salt. Simmer, covered, for 1–1½ hours or until tender; stir occasionally. Blend flour with a little milk until smooth. Add remaining milk, stir. Remove meat from heat; add milk mixture; stir until smooth. Return pan to heat, stir until mixture boils and thickens. Serve.
