This meal has been a favorite for many years. It is basically beef tips browned and slowly cooked until tender. We usually serve this with homemade mashed potatoes and corn.

Number Of Ingredients 10

1 tablespoon butter, or to taste
1 pound beef stew meat, cut into 1/2 inch pieces
2 (10.75 ounce) cans cream of mushroom soup
2 ½ cups milk
salt and ground black pepper to taste
4 potatoes, peeled and cubed, or more to taste
¼ cup butter, or to taste
¼ cup milk, or to taste
salt and ground black pepper to taste
2 (15.25 ounce) cans whole kernel corn, drained

Steps:

  • Cook in a large skillet over medium heat until browned on all sides, about 20 minutes. Stir in cream of mushroom soup, 2 1/2 cups milk, salt, and pepper. Cover and simmer, stirring occasionally, until thickened to gravy consistency, at least 1 hour.
  • Place potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Add 1/4 cup butter, 1/4 cup milk, salt, and pepper; beat with an electric mixer until smooth.
  • Heat corn in a saucepan over medium heat until tender, about 15 minutes. Season with salt and pepper.
  • Pour beef and gravy mixture over mashed potatoes and place corn on the side to serve.

    1. Place the broccoli into a heatproof bowl with a pinch of sea salt, then cover with boiling water, leave for 10 minutes, then drain.
    2. Peel and finely slice the onion and garlic, and peel and finely chop the ginger. Finely slice the chilli and cut the lime into wedges.
    3. Pound the coriander seeds in a pestle and mortar with a pinch of salt and black pepper.
    4. Slice the steaks into finger-sized strips, then sprinkle over the spice mixture and toss to coat.
    5. Place a wok or large frying pan on a hight heat. Drizzle in 1 teaspoon of olive oil, add the onions, garlic and ginger, then fry for 2 minutes.
    6. Drop in the seasoned beef and fry for 2 minutes, then add the broccoli and fry for a further 2 minutes, stirring all the time.
    7. Pour in the soy sauce and 1 teaspoon of sesame oil, then toss to coat.
    8. Delicious served with egg noodles or steamed rice, and with some fresh chilli scattered on top and a good squeeze of lime juice.

    1. Peel and roughly chop the onions, garlic and carrots, then trim and roughly chop the celery. Tie the bay and thyme sprigs together with string.
    2. Heat 2 tablespoons of oil in a large casserole pan over a medium heat. and add the vegetables and herbs. Toss everything in the oil to coat, then season.
    3. Cook, covered, for 10 minutes, or until the veg is softening, stirring occasionally. Transfer to a plate.
    4. Toss the beef in the flour and season, then add to the pan and cook until browned all over (you may need to do this in batches).
    5. Deglaze the pan with the Guinness. Add the veg and herbs, then top up with water if needed, to just cover the meat and veg.
    6. Stir in the brown sugar. Bring to the boil, then cover and simmer for about 2 hours, or until the meat is tender.
    7. Cook the potatoes in a large pan of boiling salted water, then drain.
    8. Mash with the milk, butter and a pinch of sea salt and black pepper.
    9. Preheat the oven to 200ºC/400ºF/gas 6.
    10. Put the meat in an ovenproof dish, top with the mash and drizzle with oil. Bake for 20 minutes, or until golden and crisping up.

  • Ingredients out • Kettle boiled • Large frying pan, high heat • Medium lidded casserole pan, high heat • Liquidizer START COOKING Put the lentils into a bowl with a pinch of sea salt, black pepper, the garam masala and mince, then mix and scrunch together with clean hands. Divide the mixture in half, then with wet hands quickly squeeze and mould each half into 6 fat fingers. Put them into the frying pan with 1 tablespoon of oil, turning when golden. Put 1 mug of rice, 2 mugs of boiling water and the cardamom pods into the casserole pan, then halve and add the beans and put the lid on. Squash the tomatoes into the liquidizer, peel and add the ginger, and trim and add the spring onions. Add half the chilli, the coriander stalks, turmeric, honey, curry paste and coconut milk, then blitz until combined. Pour into the kofta pan, bring to the boil, then simmer and season to taste. Take the lid off the rice, add the peas, mix it all up and give it just a few more minutes. Crack up the uncooked poppadoms and pop them in the microwave (800W) for a minute or two to puff up. Finely slice the remaining chilli and the coriander leaves and scatter them over the curry, dollop with yoghurt, then serve with lemon wedges, poppadoms and the rice, beans and peas.

    1. Mix all the spice rub ingredients together in a small bowl with a good pinch of sea salt and black pepper.
    2. Put the beef into a large bowl, massage it with the spice rub, then cover with clingfilm and place in the fridge for a couple of hours, preferably overnight.
    3. When you’re ready to cook, peel and finely chop the onion, and pick the coriander leaves, finely chopping the stalks.
    4. Heat a generous lug of oil in a tagine or casserole pan over a medium heat, add the meat and fry for 5 minutes to seal. Add the onion and coriander stalks and fry for a further 5 minutes.
    5. Drain and tip in the chickpeas, followed by the tomatoes, breaking them up with a spoon, then pour in 400ml of stock and stir well. Bring to the boil, then cover and reduce to a low heat for 1½ hours.
    6. Meanwhile, deseed and chop the squash into 5cm chunks, then destone and roughly tear the prunes. Toast the almonds in a dry frying pan until lightly golden, then tip into a bowl.
    7. When the time's up, add the squash, prunes and remaining stock. Give everything a gentle stir, then pop the lid back on and continue cooking for another 1½ hours. Keep an eye on it, adding splashes of water, if needed.
    8. At this stage, remove the lid and check the consistency. If it seems a bit too runny, simmer for 5 to 10 minutes, more with the lid off – the beef should be really tender and flaking apart now, so have a taste and season to taste.
    9. Scatter the coriander leaves over the tagine along with the toasted almonds. Serve with a big bowl of lightly seasoned couscous and dive in.
