Popeyes Spicy Mayonnaise - Top Secret Recipes image

The ridiculously popular crispy chicken sandwich at Popeyes comes with your choice of regular mayonnaise or kicked-up spicy mayonnaise. Fortunately, I was able to hack the sandwich before it sold out just a couple weeks after its debut (get the recipe here), but that recipe includes just plain mayonnaise. Recently I had the chance to hack the secret spicy mayonnaise, and I’m glad I did. Popeyes chicken sandwich with regular mayonnaise is crazy good, but with spicy mayonnaise, that sandwich is great. You can use this sauce on a variety of sandwiches and burgers, or as a dip for chicken fingers, nuggets, and fried shrimp. One more recipe from that little tin box I found high on a shelf today. I only recall making these once, when I first got the recipe from a magazine - what, 20 years ago? Don't know why I haven't ever made them again. Maybe that's when I lost the recipe box!

1/2 cup(s) mayonnaise or miracle whip dressing
1 tablespoon(s) *each* dried rosemary, garlic powder, onion powder
1 teaspoon(s) seasoned salt or mrs. dash
1 tablespoon(s) water
2 pound(s) small red potatoes, quartered

Steps:

  • Mix mayonnaise, seasonings and water in a large bowl or gallon-size plastic bag. Add potatoes; toss to coat. Place potatoes on a greased cookie sheet.
  • Bake at 400 degrees for 30-40 minutes, or until golden brown, stirring after 15 minutes.
  • NOTE: Oregano can be substituted for all or part of the rosemary. Feel free to decrease garlic and onion powders depending upon your preference.

Homemade mayonnaise is such a treat. It’s very simple to make, too. Room temperature ingredients are best when making mayonnaise at home. If you’re not able to wait for the egg to come to room temperature, submerge it in lukewarm (not hot) water for a couple of minutes. There are a few ways to make mayonnaise. We use our food processor with the small bowl attachment, but an immersion blender or making it completely by hand and large whisk will work. (Expect tired arms and strong biceps if you do choose to do it by hand). All ingredients need to be at the same temperature. If you have cold eggs and no time to leave them out on the counter to come to room temperature, place the egg into a bowl of warm water. Set it aside for a few minutes before using in the recipe.
