MAYONNAISE RECIPE | ALTON BROWN | FOOD NETWORK

Mayonnaise Recipe | Alton Brown | Food Network image

Make mayonnaise at home with Alton Brown's easy recipe from Food Network: An egg yolk, lemon juice, vinegar and oil get whisked together until emulsified.

Provided by Alton Brown

Categories     condiment

Total Time 10 minutes

Prep Time 10 minutes

Yield 9 fluid ounces

Number Of Ingredients 7

1 egg yolk*
1/2 teaspoon fine salt
1/2 teaspoon dry mustard
2 pinches sugar
2 teaspoons fresh squeezed lemon juice
1 tablespoon white wine vinegar
1 cup oil, safflower or corn

Steps:

  • In a glass bowl, whisk together egg yolk and dry ingredients. Combine lemon juice and vinegar in a separate bowl then thoroughly whisk half into the yolk mixture. Start whisking briskly, then start adding the oil a few drops at a time until the liquid seems to thicken and lighten a bit, (which means you've got an emulsion on your hands). Once you reach that point you can relax your arm a little (but just a little) and increase the oil flow to a constant (albeit thin) stream. Once half of the oil is in add the rest of the lemon juice mixture.
  • Continue whisking until all of the oil is incorporated. Leave at room temperature for 1 to 2 hours then refrigerate for up to 1 week.

ROAST CHICKEN WITH LEMONY HERB MAYO RECIPE - BLUE PLATE ...
Using this Lemony Herb Mayo as a seasoning rub results in a roast chicken that practically bastes itself. Mayonnaise, unlike butter or oil, stays put on the chicken in the oven, sealing in flavors and creating a crispy, flavorful skin. Be sure to allow time to brine the chicken.

  • Make brine: Combine the room-temperature water, salt, sugar, lemon, rosemary, thyme, sage, oregano, black peppercorns, mustard seeds and coriander seeds in a large stockpot and bring to a boil. Remove from heat and let stand until the water cools to just warm. Add the ice-water to the pot. Place the chicken in a large container and cover with the brine. Refrigerate and allow to marinate for at least 12 hours. Remove the chicken from the brine, discard brine and pat the chicken dry. Make Lemony Herb Mayo: Combine the mayonnaise, rosemary, lemon juice, lemon zest, sage, thyme, parsley and black pepper and mix well. Prepare chicken: Preheat oven to 450?. Place the chicken on a roasting pan or baking sheet with a rack. Rub the Lemony Herb Mayo on all surfaces of the chicken, coating it completely. Stuff the onion, carrot, celery and thyme into the cavity. Place in the center of the oven and roast for 30 minutes. Reduce heat to 350? and continue roasting for 1 hour or until the breast temperature reaches 180?. If the skin begins to get too dark, remove the chicken, tent it with aluminum foil, and return to the oven. When done, remove the chicken from the oven and let it stand for 15 minutes before carving.

ONE GALLON OF MAYONNAISE – PLACE AT THE TABLE
Apr 24, 2020 · Perhaps I overreacted. After reading about the parent company of Duke’s Mayonnaise announcing layoffs following a steep drop in orders from restaurant buyers, I worried that demand would make this prized condiment scarce on grocery shelves. In the COVID-19 economy, hoarding of toilet paper, hand sanitizer, and disposable gloves made these items difficult to find.
