A fried egg on matzo that's topped with cheese and tomato sauce is a kosher nod to pizza. Serve it for a quick and tasty family-friendly lunch.

3 tablespoons tomato sauce
1 matzo
3 tablespoons shredded mozzarella
2 teaspoons finely grated Parmesan
1 fried egg
Fresh basil

Steps:

  • Spread tomato sauce onto matzo. Top with mozzarella and Parmesan. Bake at 400 degrees directly on oven rack until cheese melts, 6 to 7 minutes. Top with egg and basil.

Number Of Ingredients 8

4 fat free matzo crackers
6 tbsp crushed tomatoes (I used Tuttorosso)
1/2 tsp dried oregano
1 cup reduced fat shredded mozzarella (Kosher for religious purposes)
2 medium tomatoes (sliced paper thin)
a few thin slices of red onion
12 black olives
1/4 cup fresh basil for topping

Steps:

  • Preheat the oven to 375°.
  • Place a rack on a baking sheet.
  • Spread 1 1/2 tablespoons of crushed tomatoes on each matzo.
  • Don't put too much or it will get soggy.
  • Sprinkle with oregano then top with tomatoes and onions.
  • Top with 1/4 cup of cheese on each one, olives and bake in the oven until the cheese melts, about 5-6 minutes.

  • Place 2 pieces of matzah in a dish filled with water to soak for 30 seconds. Remove the matzah and shake off the excess water. Break into approximately 1 inch sized piece. Melt the butter in a frying pan on medium heat. Add the pieces of matzah and let it fry up for a minute while you scramble the eggs. Add a pinch of salt and pepper to the eggs before pouring over the matzah in the pan. Gently flip the mixture until the eggs are almost cooked throughout, then flatten with a spatula. Flip the matzo brei onto a plate and then place back into the pan so the bottom is now on top. Scoop the tomato sauce onto the matzah brei and sprinkle the cheese. Cover the pan with a lid (or aluminum foil) for long enough for the cheese to melt. Serve nice and hot!
