A small one potato
One egg
Right amount Flour
Right amount Glutinous rice flour
Right amount milk
Right amount salt
Right amount Black pepper

Steps:

  • When the potatoes are cooked, press into a puree with a spoon, add salt and black pepper
  • Beat the eggs, add a pinch of salt
  • Put the flour and glutinous rice flour, because there is no measuring cup, I put it by feeling...
  • Stir in milk, then filter. Don’t use too much milk. It’s best if the batter is sticky. I put too much milk in this one. It’s a bit runny.
  • Put a little oil and spread it evenly, then pour the batter into the pan and fry, shape the bottom, and turn off the heat when the top is not solid.
  • Spread the mashed potatoes on the surface, remember to leave a space for the head and tail, otherwise the mashed potatoes will squeeze out when you roll it.
  • Roll up the omelet and fry for a while on a low fire, then it can be out of the pan
  • Finally cut everything and you can eat it

This recipe came together from some leftover ingredients. I've made omelettes with various veggie ingredients, but the addition of leftover mashed potatoes as a base turned this breakfast dish into a main course meal.

Number Of Ingredients 8

1 teaspoon coconut oil
1 medium Spanish sweet onion, chopped
2 cups fresh spinach
2 large eggs, beaten
1 ounce shredded mozzarella cheese
1 cup leftover mashed potatoes
1 tablespoon salsa
salt and ground black pepper to taste

Steps:

  • Heat oil in a pan over medium-high heat. Saute onion in the hot oil until softened, about 5 minutes. Add spinach and beaten eggs and mix together to coat. Add cheese and cover the pan with a lid.
  • Lower heat and steam until eggs are set, about 5 minutes.
  • Meanwhile, microwave leftover mashed potatoes until heated through, about 1 to 2 minutes.
  • Lay out cooked omelette over potatoes and top with salsa. Add salt and pepper to taste.
