Number Of Ingredients 9

3 pounds potatoes, peeled and cubed
1 package (8 ounces) cream cheese, cubed
1 cup sour cream
1/4 cup whole milk
1 small onion, chopped
1 teaspoon garlic salt
1/2 teaspoon salt
2 tablespoons butter, melted
1/4 teaspoon paprika

Steps:

  • Place the potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer until tender. Drain; place potatoes in a large bowl. Add the cream cheese, sour cream, milk, onion, garlic salt and salt; beat until blended., Transfer to a greased 2-qt. baking dish. Drizzle with butter; sprinkle with paprika. Cover and bake at 350° for 30-35 minutes or until heated through.

The tang of sour cream gives the illusion that this recipe is not as rich as the cream, butter, _and_ milk would imply.

Number Of Ingredients 9

3 pounds russet potatoes, peeled, cut into 2" pieces
1 pound Yukon Gold potatoes, peeled, cut into 2" pieces
Kosher salt
1 cup heavy cream
1 cup whole milk
1/2 cup (1 stick) unsalted butter; plus more for serving (optional)
Freshly ground black pepper
1/2 cup sour cream
A potato ricer

Steps:

  • Place potatoes in a large pot and cover with cold water by 2". Generously season with salt and bring to a boil. Reduce heat and simmer until tender, 10–15 minutes. Drain and transfer potatoes to a baking sheet; let stand until dry, 10–15 minutes. Set pot aside.
  • Meanwhile, heat cream, milk, and butter in a medium saucepan over medium heat; season with salt and pepper.
  • Pass potatoes through ricer into reserved pot. Mix in warm milk mixture, then sour cream; season with salt. Serve topped with pepper and more butter, if desired.
  • DO AHEAD: Potatoes can be made 5 hours ahead. Cover and chill. Reheat gently, adding more milk to loosen as needed.

Make the frosting: In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese, powdered sugar and vanilla seeds (or extract) together on medium-high speed until the mixture is airy, soft and creamy, about 3 minutes. Pour the batter into the prepared pan and bake until golden brown and a toothpick inserted in the center comes out clean, 1 hour 25 minutes to 1 hour 35 minutes. If the cake begins to brown too much, cover the top with a piece of aluminum foil. Cool the cake in the pan for 20 minutes, then invert onto a wire rack. Cool the cake completely, then spread the frosting all over the top and sprinkle the candied ginger over it. The cake will keep tightly wrapped in the refrigerator for up to three days.
